I have a baked lemon spaghetti recipe that I mistakenly bought Alfredo sauce instead of sour cream. I was so sure I remembered the recipe. I really don't want to go back to the store...will the lemon juice and rind do something funky to the Alfredo, like separate it?
What say you cooking peas?

I'm not sure how it will affect a jarred alfredo. It would curdle a homemade alfredo. Maybe put a little bit of the sauce in a bowl and add a few drops of lemon juice, and see if it curdles?
Jarred sauces are usually a lot more stable. If I had to bet, I'd bet it would be fine.

I would wonder about the taste though? The sour cream doesn't have any cheese in it, while the alfredo sauce does. Wouldn't it change the dynamic of the whole recipe?

Yeah...if it was just for my family I would do it, but it is for company. I probably better not risk it. I am making three different baked pastas. Back to the store I guess.... Dang it.
