I have joined up there also because I miss having a gallery to look at and have decided to be brave and start posting my layouts. I never did at 2 Peas. I have tried to take photos but they never turn out that great so I think I will try the scanning approach. I have a scanner so does anyone have any helpful hints or links to tutorials that they found useful? Thanks in advance!

I scan all my layouts (the only time I tried taking photos they turned out terribly). I use a Canon scanner and do my layout in two parts since it won't all fit on the plate. I usually lose a smidgen off the top or bottom of the layout, but it's not worth the extra work for that 1/2 inch. I use Microsoft ICE to join the parts together. If you're on a PC I definitely recommend it. It is a drag and drop program and it automatically works out where the join should be. As long as my original scans are straight it does a really good job of joining them together.
You can find it here: Microsoft ICE download
