Thanks for the information elaine. We have been trying to switch our nonstick over to ceramic for health reasons so that'll probably be the decision maker right there for us. We are trying to switch to a more Paleo based diet for my autoimmune issues so I don't think the yogurt function would get much use.

This is great! I'd love to have a thread to share recipes and find new ones to try. I've been making an effort to use my Instant Pot more this year, and I've been doing pretty well - about 3-4 times a week so far this year.

Unfortunately, the only electric pressure cooker that is safe for canning is the one that Ball makes. It sells for $299, and is not a multicooker. If you want to can, you have to go with that model or buy a stovetop pressure canner. The bonus is that you can also pressure cook in a stovetop pressure canner, but it isn't set-and-forget like the electric ones. You have to constantly monitor the pressure level and adjust your heat source to keep it consistent. I don't regret my pressure canner, but since I really only use it in the summer for fruits and veggies, it is down in storage in the basement until I need it - it doesn't live in my kitchen. If if you have any questions about the Fagor, please ask! Thanks so much! I wouldn't use a pressure canner enough to justify the cost. I want a set-and-forget electric pressure cooker. I do think I'd like the 8qt because I want to do whole chickens and large roasts as well as large pots of soup. I also think the 8qt would hold more jars of yogurt if I decide to do the yogurt in jars. Can you pressure cook with smaller amounts like 1/3 or 1/2 full? I really like the idea of searing and then pressure or slow cooking. Dh and I LOVE French Onion Soup, and being able to sautee the onions and then slow cook the soup in one pan--set and forget--would be great. I also like to sear the stew beef and onions for my grandmother's beef vegetable soup before I let the soup slow cook all afternoon.

I have one of the ones that makes yogurt, though I haven't tried that function yet. I keep buying cream cheese with the intention of trying a cheesecake but haven't done that yet either! Have you tried making hard boiled eggs in yours yet? I haven't perfected it yet, but it's pretty cool! When I first got mine, I made a custard/flan and it was delicious. I used a recipe card that came with it. I do hard boiled eggs all the time, I think I cook for 6 minutes, rest for 10 min then soak in ice water. It's not a time saver, but the shells come off so easily, I prefer this method.

For those who have done meatloaf, a question. Because the pressure cooker essentially steams your food, what is the texture of the meat like? I'd be worried that it would come out with a wierd texture.

One of the pressure cooker gurus out there on the internet said, "you can cook 1/2 cup of rice in an 8 qt pressure cooker, but you can't fill a 5 qt cooker more than 3/4 full for pressure cooking." She was trying to convince people to buy the largest size that they thought they would use. I had purchased an 8 qt slow cooker simply to be able to make chili and turkey soup in the amounts that we eat, so I knew that I would easily use an 8 qt multi cooker to its full ability. And, like I mentioned, I like to pressure cook large briskets, two Cornish game hens, a full chicken, etc., for my boys and I don't have to worry about it fitting.

This would be great! I just received the one that was the TSV on QVC and had actually just boxed it up to return it, but seeing this thread, maybe I should hang on to it. Thanks for heading this up! The good thing about QVC is that you have 30 days to return it, even if you use it. How long do you have left to play with it before you have to decide? Although, I think that once you start using it, you'll keep it. I have until the 23rd to get it back in the mail. I did sealant test they recommended before use & kinda got freaked out with how much steam came out. I just need to try it.

A lot of steam comes out of the lock mechanism until it is enough to trip it/ force it up. Don't worry, that is normal. You will hear and see steam escape for about 5 minutes until it seals and locks. Please don't be afraid of it!

Your info about size was exactly what I needed to know. I'm definitely going to go with the larger one ( that's what SHE said!...) I just wanted to make sure that the cooker could do smaller amounts. I chose a 14 cup Cuisinart food processor over the 12 cup because I do a lot of double recipes of pie crusts. The only issue was that if you don't have enough ingredients in the bowl, the processor didn't work well.
I have a 6 qt Le Creuset dutch oven, and I keep finding that I'm filling it to the brim or having to transfer the ingredients to my 8 qt All Clad stockpot. I prefer the Le Creuset for browning then braising over the lighter metal of the All Clad--which I like best for pasta and large quantities of soups that just need to be heated.
I'm thinking I would really like the ceramic interior of the Fagor because it holds heat much better than a thinner aluminum. I think it also has more features than the Breville, and is cheaper.

You could still use it for coconut milk yogurt if that interested you. I have the Instant Pot Duo 6qt 7in1. I hear they are coming out with an 8qt very soon. I think you can already order one on Amazon. The pre-orders of the 8qt are already sold out - 1 day - and it won't start shipping until May or June. I am planning on getting one this summer after they are caught up with the pre-orders.
