With Ash Wednesday and Lent coming around, I'm looking for meatless dinner ideas. I usually do fish those days, but this year I want to see if I can find some recipes that require no meat or fish. TIA for your ideas.

Can you narrow it down to what type of recipe you're looking for? Soups, stews, stir fry, pizza, etc.
Pretty much anything can be made without meat, from pizza to meatloaf and gravy.

We do a meatless day one day a week. We have things like veggie lasagna, sweet potato and black bean enchiladas, omelettes, tomato soup and grilled cheese, grilled vegetable sandwiches, eggplant parm, etc. Google and Pinterest is your friend.

1. French provencial vegetable soup (soupe au pistou) 2. Angel hair pasta tossed in sun dried tomato sauce (Giada DeL) 3. Bean cheese rice burrits with sliced avacado, lettuce, tomatoes 4. Tostada salad bowls, add in beans for ptotein 5. Cheese, spinach, tomato pizza 6. Waffles, fruit salad 7. Omlet with fruit salad 8. Cheese enchiladas with lime rice 9. Cheese lasanga with garden salad 10. Winter minestrone minus the bacon (Giada DeL) 11. Vegetable soup 12. Vegetable chili 13. Blt sandwiches with potato salad and chips 14. And pasta dinner

In the summertime I'll do a bunch of salads: fruit salad, crunchy vegetable salad, potato or macaroni salad, etc.

I eat meatless more than I do meated (lol) meals. Pretty much everything can be reworked to not have meat in them. What is your favorite recipe or two? Maybe the better question would be how we can help rework your favorites to be meatless and still healthy.

This is one of our favorites... you don't miss the meat...
Panch Phoran can be purchased at Penzy's or amazon.
Almost anything can be made meatless... do you want naturally meat free meals.. or are you looking for meat substitutes?
Cauliflower Dal Ingredients 1 1/2 cups masoor dal or red lentils 4 cups water 1 teaspoon turmeric 1 teaspoon salt (or to taste) 1/8 teaspoon canola or grapeseed oil (or canola oil spray)* 1 tablespoon panch phoran 1 large onion, diced 2 cloves garlic, minced 1/8 teaspoon red pepper flakes 1 teaspoon ginger paste (or 1 tsp. minced ginger) 16 ounces diced tomatoes (or 1 can) 1 head cauliflower, cut into small florets) 1/2 cup water Instructions Pick over and rinse the lentils and add them to a pot with 4 cups of water and turmeric. Bring to a boil and reduce heat to low. Simmer until the dal is tender, about 20 to 35 minutes. When done, add salt and set aside. While the dal is cooking, prepare the vegetables. Heat a large, deep skillet, preferably non-stick. When hot, add the oil and shake it to spread it around. Add the panch phoran and stir. (You may instead use oil spray; spray before and after adding the panch phoran.) When the first seed pops, immediately add the onion, garlic, pepper flakes, and ginger paste. Stir and cook until the onion softens, about 2 minutes. Add the tomatoes, cauliflower, and 1/2 cup water, and stir. Cover and cook until the cauliflower is just tender, about 10 minutes. When the dal and cauliflower are both done, add the dal to the cauliflower mixture. Stir well, and check seasoning, adding more salt if needed. Simmer gently for about 10 minutes to allow flavors to blend. Serve hot, over rice if desired. Notes Tempering the spices in just a tiny bit of oil keeps this dish low-fat while preventing the harsh flavor that can come from burned seasonings. If you absolutely refuse to use even minuscule amounts of oil, you can try dry-toasting the panch phoran, but you do so at your own risk!Once you try panch phoran, I hope you'll be as excited about it as I am. Veggie quiche. I make it with different crusts - flour, polenta, rice, potato. Put in whatever veggies you have with eggs and different kinds of cheese. It lasts two nights here with Dh and me.

I made my very first quiche the other night. It turned out well enough, but it definitely needed some work. I am not sure what the issue was-would you mind sharing your basic recipe? I think that might have been the issue. I added in onions, peppers and mushrooms. That part was okay, but I am not sure the egg/milk mixture was right.

I love veggie tacos: Roasted Veggie and Black Bean Tacos - I use a variety of veggies: mushrooms, red or sweet onion, green, red, yellow bell peppers, frozen corn. Top with your favorite toppings. I like sour cream, avocado, salsa and a sprinkle of cheese. OR I will make refried black beans and add shredded lettuce, tomato, cheese, sour cream, black olives salsa, avocado. I fry some corn tortillas, but also like to thrown them directly on my gas burner and char them a bit for a nice roasted flavor. 7-Layer Tostadas are great and filling as well. You can make or buy the premade tostada shells. Sour Cream Cheese Enchilladas with a salad and maybe baked jalapeno poppers (parboil halved peppers. Mix cream cheese, cheddar or Mexican blend, chili powder or taco seasoning and a little dehydrated minced onion. Stuff peppers. Mix panko bread crumbs with a little olive oil. Sprinkle on top of stuffed jalapenos. Bake until lightly golden. Or serve with a nice corn and black bean salsa/salad. Or even sauteed/roasted zucchini, yellow squash and tomatoes, corn and onion makes a hearty side for this. Make meatless taco salad. I add taco seasoning to sour cream and let it refrigerate for awhile. Then throw together any mix of lettuce (I like iceberg and green and red leaf lettuce), tomatoes, cheese, black olives, black or kidney beans well rinsed and drained, sometimes corn (defrosted or canned, rinsed and drained), red or green onion, crushed up doritos (for more taco flavor). Drizzle with taco flavored sour cream, a little salsa and I prefer Light Catalina dressing. DH prefers Ranch. This is a good homemade taco seasoning . You probably have all the ingredients and can control the salt. There are all sorts of meatless pasta dishes. We really enjoyed Creamy mushroom pasta with caramelized onions and spinach . I did lighten up the recipe a bit and it was still delicious. This Bow Tie Pasta with Oven Dried Tomatoes, Asparagus, and Boursin and this Roasted Tomato Pesto Philly Pasta are great with a nice salad and some crusty bread. Crispy German Potato Pancakes or Sweet Potato Latkes are delicious with sour cream or applesauce. Serve with a nice, hearty salad or a variety of roasted veggies. I love black bean soup, hearty veggie soups, tortellini soups and meatless chili (lots of beans, peppers, onion, sometimes zucchini). These Portobello "Philly Cheese Steak" Sandwich are a favorite of mine. DH likes them because the portobello are meaty in texture. I also use portobellos and grill or roast them to make them burger style on a hamburger bun with lettuce, tomato, cheese, pickles, and grilled onions. Serve with baked sweet potato fries. YUM! A bit fattening but filling favorite is fried potatoes, a pot of beans and cornbread. I am perfectly happy having a dinner of a variety of roasted veggies. Tomato soup (homemade is great and easy) and grilled cheese is great. Broccoli cheese soup, salad and bread.

Quiche or frittata. This is a good, basic quiche recipe. I add whatever I like in the way of meat, veggies, cheese, whatever, rather than the bacon and Swiss of her standard quiche Lorraine.

Lentil Tacos. Even my meat eating husband will eat these. Saute some onion and garlic and then cook up some lentils in the saute (directions on package) with taco seasoning. Mash them when they are soft. Great meatless (and vegan!) taco filling.

I have the recipe at my other house but you can google lentil meatloaf and lots will pop up. Read through the reviews, which often contain tips on ingredient adjustments and such. I made a vegan mushroom gravy with it with the following recipe. I didn't use the wine in it as I dislike the taste of wine in sauces. You're welcome. I also love tacos or making a big taco salad using crumbled firm tofu instead of meat. I 'brown' the tofu in a nonstick frying pan and add the packaged taco seasoning in just like I would if using ground beef. Yummy. I've made sloppy joes with the Boca meat crumbles too. And one of my favorite things is to make veggie pizzas on pita breads. The crust gets nice and crispy and I load it up with fresh veggies and chickpeas. I use vegan cheese but since you're only cutting out the meat you can smother it in regular mozzarella. Better than pizzeria pizza in my opinion. With a variety of toppings, each family member can put what they like on their personal size pizza.

I've made this Zucchini and sweet potato slice several times and really like it. The recipe says 4 eggs and two egg whites, but I never add the extra two egg whites and it still comes out perfectly set without them. One time I substituted the ricotta with tofu and that was also good. I've eaten it hot out of the oven when first made and then also cold with a salad the next day, it works well either way.

Have you ever had tofu and meat sauce? I like tofu and I love the texture so I just make it with spaghetti. I would use the 4 cheese sauce and tofu. I like the medium firm kind. It's not weird or anything. It is just a soft, not chewy protein.
