If you wanted to bulk it up, you could add an extra type of canned bean, maybe white northerns? Serve it like regular chili, or I like it over baked potatoes.

Add feta and season with 1/4 tsp each salt and pepper. Add eggs to skillet. Use wooden spoon to distribute tomatoes evenly. Lower heat to 375 and return skillet to oven. Cook until frittata is set in middle. 10--12 minutes. ~Peanut Noodles Sauce 1/2 cup peanut butter 1/4 cup soy 1/4 cup rice vinegar Tbsp sesame oil 2 tbsp Sriracha (less if desired) 1/4 cup water Tbsp minced ginger Minced garlic. 3 cloves 2 tbsp brown sugar Whisk together and combine with cooked linguine noodles or rice noodles. My husband just likes his with some crushed peanuts and extra sriracha, but I add shredded carrots, scallions, and peanuts to mine.

I used to make a similar Asian-flavored "peanut butter spaghetti" for my kids when they were little only I left out anything spicy. Haven't made it for years. I like simple meals a few days a week, so we do meatless meals often. We have pasta a couple times a week with different vegetables, and pasta salad. We also make a big salad with lots of vegetables and beans, eggs, almonds, etc. Chili is also a favorite.
I don't like cooking meat (just because I don't like touching raw meat, weird, I know!) so meatless meals are our favorite.

Can you narrow it down to what type of recipe you're looking for? Soups, stews, stir fry, pizza, etc. Pretty much anything can be made without meat, from pizza to meatloaf and gravy. That's what we do! When we are trying to save money we do a lot of meatless meals.

It's kinda squishy and yucky, lol. It was fine when it was done though. I have to get to the store to find stuff to make eggless egg salad, lol.
