Does any of this have gluten? I am making a dessert for a get together and the son has Celiacs. TIA
Ingredients
4 extra-large egg whites, at room temperature Pinch kosher salt 1 cup sugar 2 teaspoons cornstarch 1 teaspoon white wine vinegar 1/2 teaspoon pure vanilla extract Sweetened Whipped Cream, recipe follows 1/2 pint fresh strawberries, hulled and sliced 1/2 pint fresh blueberries 1/2 pint fresh raspberries Triple Raspberry Sauce, recipe follows 1 cup cold heavy cream 1 tablespoon sugar 1 teaspoon pure vanilla extract 1 half-pint fresh raspberries 1/2 cup sugar 1 cup seedless raspberry jam (12-ounce jar)

I emailed the mom and it is also in vanilla extract if it is not labeled pure. She also said the jam can be an issue.

On the surface it looks fine, but there could be cross contamination in the cornstarch. But check the box for more details, it should say if it was made in a place that avoids cross contamination. I would also check about the vinegar and vanilla because I *think* most are safe for GF but some may not be. That said, I think you're fine other than checking for cross contamination. ETA: Good call on calling the mom. It's true the jam could be an issue.

Thanks. I looked up cornstarch brands that are gluten free. I am going to stop at Wegman's and get what I need. They have a great gluten free aisle.

First of all, thank you so much for taking the time to make something gluten free. I am always so touched when someone makes the effort!
It looks like a great recipe to make gluten free, I would just keep a few things in mind.
The vinegar should be fine because it is white wine vinegar. I would just google the brand name of the corn starch that you use to make sure it is certified gluten free. I always use pure vanilla because of the risk of cross contamination.

And make sure your mixer is spotless. Often times we forget to clean under the parts we can't see and flour can drop into the bowl when the beaters are used.
ETA I see others mentoned cross contamination as well

It is a pavlova so I don't add sugar to the whipped cream since there is so much sugar in the meringue. Thanks for the reminder about the mixer.

As others have said, Possible suspects on that list are cornstarch, sugar, vanilla, egg white if from carton, and cream. Some of these items can be cross contaminated or use 'modified food starch' to thicken or keep from clumping.
My mom had frequent trouble with Dressings Mayo watch your brand Sour cream ( some are not just cream!) And confectioners sugar Ice cream! Egg whites from a carton ( deoends in brand )
Good luck figuring it out.

I always get Star brand as it states gluten free. Gluten is NOT just flour. Malt is a gluten. Also make sure the cornstarch you use says gluten free as some brands add flour. Then there is the heavy cream. Again it could have an additive that has gkuten. Pure vailla by McCorkicks is gf and safe. And the sweet cream could also have a gluten preservative.

There are certain brands of cornstarch (listed in the link I shared above) that are safe. I'd recommend checking Celiac-related sites for safe brands of jams, vanilla, etc.

Bonne Maman preserves are gluten free. Dd has Celiacs and she uses that brand.
If you need a new dessert, King Arthur makes gf flour. I use that to.make a delicious gf cobbler.
