I think I'm going to make chicken and wild rice soup in my pressure cooker tonight. I'm pretty sure I posted the recipe in the recipe forum a while back.

Which brand of pressure cooker do you guys have? I starting looking and was quickly overwhelmed with choices. If it matters, we are a family of four.

I have a fagor 6 qt electric. If I was buying now I would get the one with the ceramic pot-the fagor lux. They sell the pot separately but I don't know if it'll fit my cooker (which is an older model).
Instant Pot is supposed to be very good too.

I have used mine every day this week. I did a pasta with alfredo sauce that my husband really enjoyed. Tonight for dinner we had a Costco chicken, I put some red potatoes in the pressure cooker for 6 minutes they were a little under cook. I didn't notice until we were at the table so next time I think I will do 8 minutes. Right now I am making broth in the cooker with the chicken carcass and put it on pressure for 30 minutes. Crossing my fingers it turns out awesome. I usually make broth in my crock pot but it take HOURS and I can't stand the smell.
I found a rice pudding recipe that I want to try some time. Tomorrow's plan is refried beans without the refried. Jen

My 6 qt is an Instant Pot and my 8 qt is a Fagor Lux with the ceramic pot that gale mentioned. Both are great. It depends on what you want to do with it - if you don't want to start with a ton of settings, Costco usually has the Cuisinart for around $69. That was my first electric pressure cooker and I really liked it.

Good morning fellow pressure cookers!! I have the Tramontina 6.3 Qt electric pressure cooker. It's a nice one to start with but if I had the purchase to do over I would go with the Insta Pot. I can't saute in mine, so if I want to sear my meat before cooking I have to do it on the stove first. I tried the rice from last week as part of last nights dinner. We had chicken tacos with the rice. I made the chicken in the crock-pot with some of Penzey's Chicken Taco seasoning which is SO GOOD. I found this cookbook: www.amazon.com/gp/product/1518830064?keywords=365%20electric%20pressure%20cooker%20recipes&qid=1455457291&ref_=sr_1_3&sr=8-3and thought it might be a good one to start using with my pressure cooker. I would love to hear any other suggestions for cookbooks. Thanks and I'm really enjoying these threads.

The last thing I need is another dust-gatherer in my appliance garage (aka the kitchen cabinet).

Ground beef risottoWe made the above recipe in the pressure cooker last night. We set the timer for seven minutes and that seemed about right. I did add some basil & oregano to it. It was pretty good. My husband said it reminded him of something his mom would have made. I ordered my pressure cooker when it was the TSV on QVC last fall. I can't remember the brand name - Cook's something. I have the 6 quart size and feel like it's big enough. We only have three people living in our house full-time. I have not felt like I would like to have a larger size, but if you were routinely cooking for 5 or more people, I can see where you might.

spaghetti sauceI just made this pasta sauce in my pressure cooker using the browning setting. After I had the sauce prepared I dropped in uncooked homemade meatballs and set the timer for 7 minutes. I've made this before and it was really good. My husband made the comment that I'm getting pretty confident with the cooker.

I hope it was good, but I'm starting to think you may have been disappointed. I hope not. Ahh, Elaine! I winded up not making it! We winded up eating out that night instead and then we were gone for the weekend. I appreciate the moral support! While I was away I went though the Hip Pressure cooking website you shared and pinned a bunch of recipes. Such a good website! Enrique asked me for a bean soup WITH beef, which for soup I use beef shank, so this is a perfect thing to put this machine to the test! I've been looking for recipes but I'm not seeing anything exactly like he likes it. One thing I'm excited about is the fact that I can make a small batch of this soup, which is so dang practical. I hate having a ton of leftover soup, I'm not big on freezing soups with veggies in them as they turn to mush. This soup he's wanting veggies in it too. I think I'll need to cook the beef first, then add the beans after and then the veggies at some point. I'm thinking I have to coordinate it all. I'm going to post on the FB page for the InstaPot group how they suggest I cook it. If this works out then I'll be so happy. Beef shanks normally take at least 3 hours simmering on the stove. At the very least I can precook the shanks in the pressure cooker and then finish the soup on the stovetop. I'm going to soak my beans tonight.

Instant Pot here; Glad to have it, it is silent when cooking. This week I made a batch of steel cut oats w/vanilla and a cinnamon stick (then divided into individual bowls for breakfast during the week, also added frozen berries, and a bit of half n half). And a half dozen medium hard cooked eggs (don't care for chalky yellows) for salads.
