We are having several people over for a build-your-own-kabob party. Do you have suggestions for recipes or how to make a set-up station for our guests to put their knobs together? We planned on setting out chicken, beef, and shrimp, along with peppers, tomatoes, onions, mushrooms, and pineapple. Haven't decided on a marinade yet. Any tried and true suggestions for me? It's for my family, and I like these things to be somewhat impressive

A friend of mine had make-your-own kabobs party. She had the meat ones already made up - that way no one had to handle the raw meat. (and in my experience the meat takes longer to cook than the veggies, so it's better when they are on separate kabobs). She then just had platters and bowls set up with the veggies and we skewered our own.

Skinny Taste Grilled Pesto Chicken Kebabs is one of my favorites. We use this for chicken and shrimp. I like it best with the chicken though. I like to put tiny tomatoes, purple onion chunks and small portabella mushrooms on the skewers. They cook fine with the chicken, IMO. ETA: I just remembered another one that I really like: Grilled Key Lime Chicken Kebabs

I usually just marinate the meat and vegetables in Kraft Zesty Italian dressing. we love it.

Thanks for the recipes, ladies! I think I'll have to try two or three of them We had a gathering like this last year and everyone wants us to do it again, but I can't remember for the life of me remember how I set it all up. Old age, I guess.....

When we make kabobs we do meat separately. The idea of raw chicken touching all the rest of the food just skeeves me out a bit. I'd do as kckckc suggested and have the meat kabobs already made up and let guests make their own veggie ones.

If you use wood skewers, don't forget to soak them in water!
While this sounds like a fun idea, I would be concerned about cross contamination. Also, I wash my hands constantly while handling food & food prep. I'd feel weird about asking everyone to wash their hands both before and after handling, meat, chicken, fish.

I quess I would make the kabobs up ahead of time, vs having everyone do their own and handling meat,etc. They can pull off what they don't want afterwards, and give to others. Plus we also do the meats separately.
I marinade our chix and shrimp in a mix of apple juice, soy sauce, lemon juice and olive oil. Turns out great. Very moist and flavorful.

Thanks - more recipes! I should have clarified - my sister and I handle putting all the meat on the skewers and let everyone tell us what they want. I'm pretty particular about food issues. I do let the family handle the skewering of the veggies, however. They all wash their hands first and I put out a few containers of wipes. I do what I can to keep the Ick factor out of the kabob assembly
