Hello Vegan Peas. I'm sorry I got this week's thread started a bit late today. How are you all doing? Did everyone have a great Valentine's Day? DH and I did our usual date night (which I love) where we first have dinner at Whole Foods, and then head over to Barnes and Noble for a few hours looking through the books. Since we don't have a vegan or vegetarian restaurant in town it's our place to go for dinner when we want something quick and healthy. Quick being the key word here because I want to eat well, and then get to the books At the deli at Whole Foods you can get what they call a Value Plate where you choose your protein and then can add two sides. If it's a vegan or vegetarian choice it comes to $10.00. Last night I got the crusted tofu with lemon sauce (extremely delicious, I'm going to have to try to figure out how to make this at home), green beans and another veggie side-a type of salad that was full of all kinds of goodies, veggies, tiny beans, and olives. It's freezing here this week (in the 20's F) so I've got some warm dishes planned to cook for dinner including a new soup recipe. Hi! Hope you are feeling better Debbie! We had a nice Valentines Day in, and went off diet. DH bought me lobster, which is my all time favorite. It was heaven! Then for dessert I made this chocolate cake, also known as crazy cake, wacky cake and depression cake. It is Vegan and pretty darn good, but probably not ideal for the FOK diet with the sugar and fat in it. And I didn't use whole wheat flour because we are still trying to use up things in our house that aren't on the plan. That link also has other flavors of it which I will definitely try! I made this two ingredient Chocolate Fudge Frosting and it was also pretty yummy. Even the kids liked it! Hope you all had a special day!

Made this for dh who said it was really good warm and is looking forward to it tomorrow www.fatgirltrappedinaskinnybody.com/2011/12/wild-rice-salad/I used apple cider vinegar and regular mustard and omitted the celery because that's what i had available. Also if you're into making vegan cheeses and sauces with cashew, Costco sells 2.5 pounds of "raw" cashew for under $17 which is even cheaper than the bulk bin at the local store.

I apologize again for being late getting back to this thread. I'm still sick and going to the doctor in about an hour to be checked again for this sinus infection.
Tamaraann-Lobster sounds like a delicious Valentine's dinner! I don't blame you for going off diet for a special holiday dinner one bit if you get a chance to have a dinner like that! It used to be my favorite food in the world before I moved to Annapolis, MD 22 years ago. Then I got a taste of Maryland blue crabs with Old Bay seasoning and that became my number one favorite with lobster at number 2. We've been to Maine 3 times on vacation and had lobster there fresh out of the water and it is so delicious that way-of course this is all before even thinking about going vegan. But, I have to admit that once a year in the summer I do cheat and sit down with my adult DS and share some steamed crabs with him. It's a tradition with us. That's all we have. Crabs and beer. Rip Esselystn said that every New Year's his father Dr. Esselystn cheats and has several Reece's Peanut Butter Cup's. He gave a number, but I forgot what it was-something like 6.
Grom Pea-Thanks for the recipe and for the advice about the raw cashew. That's very helpful. I will have to look for it.
Rainbow-I love potato soup so I will have to give this recipe a try although I'm so sorry for your blender mishap! Oh my-that would have made me so frustrated! Thanks so much for including the link for the recipe.
I've got to run and head off for the doctor. Hopefully I'll get some good news about treating this darn infection so it can finally be killed.

Feel better birukitty! I made a variation of this salad with what i had on hand and substituted agave for honey. The dressing is great pinchofyum.com/chopped-thai-salad-sesame-garlic-dressingI used Napa cabbage instead of all kale as kale is a little rough and this evens out the textures.

They were on sale 2/$7 so I grabbed these 4. I've tried all but the scallopini. I LOVED the chick'n strips and the fishless filets, but the crabless cakes were only so-so. I won't eat these products every day but they'll be easy on days I just want to be lazy and am low on motivation.

Thank you! It was good. I should clarify that I used 50/50 Napa cabbage and baby kale, rereading i thought it sounded like i only used napa. This is my first use of lemongrass paste and I'm glad I tried it!

I like the Ordinary Vegan. She has recipes and podcasts.
I like Gardein stuff too. I have some of the sweet and sour porkless pork in the freezer.

Yes I knew about Meatless Mondays at Whole Foods but that's also the day the lines are ridiculously long after work so I avoid going there like the plague. I'm working my way through Oh She Glows cookbook and everything is delicious. She also has a blog and is working on an app.

Hi Everyone! I got to my doctor yesterday, and he's put me on a very strong antibiotic to try to finally knock this sinus infection out. It's for 10 days so hopefully I'll be feeling better soon. He's a 40 minute drive away but I don't mind going because he's the type of doctor that listens to his patients, and respects them and sometimes and that's rare to find. He said this time that he's always amazed to see how healthy I am at 55 (other that this infection). Each time I see him we discuss vegan diets and he's told me of a doctor that gave a speech 20-25 years ago about the advantages of a dairy free diet and how he was run out of town because of his views. His name is Dr. Frank Oski and he was the former chief of pediatrics at Hopkins University Hospital and the author of "Don't Drink Your Milk". My doctor told me about this the first time I told him I was vegan and eating a whole foods, plant based diet. He told me he never forgot that paper. This time he wrote down the "Forks over Knives" title and put it in this shirt pocket. We always discuss it, but then he forgets the title. It'll be interesting to see what he thinks of it. This is my GP. I also have an Integrative Medicine doctor who I've discussed before-he's the one that's on the Paleo diet. I'm loving all of the recipes you all are posting and that Thai salad really looks delicious. One of the first things I noticed from this blog, besides the great writing, is the amazing food photography. Some blogs, and even some cookbooks, are letting the standards of food photography slide lately and yes I'm being picky. I can't help it as a former photographer myself.But with this blog the photography really stood out-it makes the food look delicious! I'm going to try to make that when the weather gets a bit warmer. Thai food is my favorite because of the flavors and I've used lemongrass before in a different recipe. I love the flavor it imparts to recipes. Thank you so much for posting this Grom Pea. Rainbow-are the recipes you posted from Ordinary Vegan book and if not, what book are they from? I LOVE blueberry muffins and these look super easy using applesauce instead of having to deal with replacing an egg with an egg substitute. How did they taste? I've read on the blog www.100daysofrealfood.com that you can buy whole wheat white flour for baking, but I'm not sure if the nutrition is that same as just plain whole wheat flour. Those baked sweet potato fries look mighty tasty too! I adore sweet potatoes and like eating them just plain hot and baked from the oven. But sometimes I still crave fries, and what better way to have them? Of course it's better to have them only once in a while because of the oil, but that's for each of us to decide. Those muffins look good! I have some frozen raspberries that I picked during the summer and as you may know, I have been craving something like cake, cookies or muffins. I'm going to try making the muffins with raspberries tomorrow, if my pain level allows. birukitty I am glad to see you are on the mend. Being sick is just no fun. I'm almost done dealing with all of my recent health issues, thankfully. I am scheduled to have my final iron infusion at our hospital this coming Monday. I'm feeling a bit more energetic these days, and I think it's a combo of the infusions and the healthier eating habits I've picked up. I'm excited for my annual California vacation, which is coming up in April! I've already scoped out some good places to eat using the Happy Cow website. I stay with friends out there who are not vegan, so I will be practicing a few recipes to come up with some delicious meals that even non-vegans will like. Any suggestions?

Debbie in MD. Glad you got a really good doctor who looks into things! I haven't approached my GP with this yet, but am eager to see what he says. I was to do a blood workup now and recheck it like in a year and see the differences, if any. The muffins are delicious! I only used one cup of blueberries, I didn't sprinkle any over the top. A shallot is a type of onion. Oh! Thanks! I have to admit I am learning how to cook again while on this journey. For too long I was the heat -N- eat type. If it was frozen and I could pop it in the oven - dinner! I used to cook from scratch a lot when the kids were little, but now with my daughter in school most of the time it's just me to cook for. It's fun learning new stuff that tastes good.

If it was frozen and I could pop it in the oven - dinner! I used to cook from scratch a lot when the kids were little, but now with my daughter in school most of the time it's just me to cook for. It's fun learning new stuff that tastes good. It is fun! I have recently discovered several new foods myself. Leeks are another onion-ish food that I recently tried and liked, since I love onions. I tried star fruit the other day but it didn't thrill me. I plan to keep trying new produce weekly. There are so many different varieties of things like mushrooms, onions, potatoes, apples, lettuce, etc. The only problem I have is buying too much at once and not being able to consume it all before it goes bad. I have to work on that by making better meal plans.

Oh...you know, I totally meant to add this to another of the vegan threads, but completely forget until I went to the grocery store.
I love soup. I am, however, the only one around here that eats it so often I end up with some kind of canned version. I like some of the Progresso soups, but by far my favorite is their lentil soup. It is a really thick, tons of lentils with spinich soup that is labeled vegetarian but is (according to the company) vegan. I can't tell you how good this stuff is and if you at all like lentil soup, but don't always want to make it yourself, this is the stuff to keep in your pantry for a quick meal.
There are a couple other of their soups (there is a tomato basil soup and ... something else I can't remember) that are also vegan, although they are label vegetarian. It is really easy to figure out though-their labels are really easy to read-right up to the point that just above the ingredient list it says 'vegetarian.'

They had a very mushy texture to me and I cooked them exactly as the instructions on the bag said to. The taste was good, but I won't be buying that variety again.

My dh isn't interested in vegetarianism let alone veganism but I think about it often--until I think about seafood. I have no self control. Today was a vegetarian day for me but those days are rare. Also, is wine vegan? I started transitioning to a vegan diet shortly before Thanksgiving. I was inspired by some great documentaries and it just kind of clicked in my head that this was the right thing for me to do for myself, for animals and for the planet. I made a goal of New Years Day for my firm commitment. During the time in between, I began to use up the groceries I had on hand rather than just throw everything with animal products away. But each time I went shopping, I no longer bought anything with animal products in it. I also used that time to find replacements for things such as milk, white sugar, and so on. A big thing for me was dairy products. I tried out several kinds of milk like soy, almond, rice, and cashew to find what I liked best. I began to scour the Internet to educate myself about the different names for animal ingredients so that I'd have that knowledge when I shopped. I read books and blogs and visited websites and message boards. I learned an awful lot and I'm still learning. I researched product reviews for things like vegan cheese. I already had an education in nutrition that helped me understand what nutrients I need to pay special attention to, but I still did a lot of reading about that too. I broke out some of my college books on basic nutrition and refreshed. By January 1st, I'd already been pretty much animal-free for awhile but I did indulge in one last beef cheeseburger--for about two bites--at the end of last year. It has been a very easy transformation for me, much easier than I thought it'd be! As for wine, I don't drink it but your question made me wonder so I Googled. It seems to be somewhat like table sugar in that the ingredients themselves are vegan but some of the things they use in the processing may not be.
