I want to make white chicken chili for dinner. I have a rotisserie chicken to use and would like to make the soup in the crockpot since the rest of the family will be home before I am, but I am not sure if the chicken would get dried out/gross if it is in the crockpot for 6+ hours when in is already cooked? What do you think?

In chili? There should be more than enough moisture from the tomatoes and such that it won't dry out.

I have a chicken tortilla soup recipe that I make in the crock pot. I use rotisserie chicken and it never dries out.

I wouldn't do it. If it's already cooked, they could just toss it in there for 20-30 minutes when they get home.

My white chicken chili doesn't have tomatoes...
I don't use rotisserie chicken, but I don't really think it will dry out (although, I think most rotisserie chicken is a little on the dry side to start. Put it on as low as you can.
Mine has milk and sour cream in it, and I never add that until right before serving. I don't do mine in the crock pot, but if you get those too hot - they "break" or curdle.

If it is already cooked, you can throw it in at the last minute and it won't take but a minute to heat up in the hot liquid. But I think it would be fine either way-most soup is cooked for a while and a good majority of the recipes call for pre-cooked chicken. Would you care to share the recipe?

I would also vote for putting it in late in the game. Have someone in your family put the chicken in a half hour or so before you get home. Then it'll be ready to eat when you get home.

I think it will get dry so I would have it cut up in the fridge and as soon as you come home put it in. By the time you are ready to sit down to eat it will be heated thru.

My slow cooker white chicken chili recipe calls for cooked chicken. That's what I use, and it always comes out great. I think because it's soup, the other ingredients help keep the chicken moist and tender. But, you could also add it later as others have suggested.

Into a nice liquid dish, the pre cooked chicken won't dry out. It will get drier sitting in the fridge all shredded up. If it were going in the oven, I'd say leave it until last. But for chili, it will be fine cooking with the other ingredients.
