Whoever mentioned this last week (not sure what thread!) - THANK YOU!
Normally for lunch I either skip it or grab something quick. This week, though, I have had a sweet potato for lunch each day with just a touch of butter and OMG. It has been the best.

I love baked sweet potatoes but I like the white sweet potatoes and the best thing on them with the butter is everything bagel seasoning from Costco. Daughter found it there once a few years ago and we have been hooked every since.

I have fallen in love with sweet potatoes. So many of my Whole 30 recipes called for sweet potatoes, and the recipes were so good I'm still making them even off of Whole 30. It never occurred to me to eat them plain with butter for lunch, but that is a great idea. I could even do that when I travel. Too bad I've already had lunch today, because now I really want one!

It's not a butter, I just think she meant along with the butter. It is in the spices and seasonings section of costco. It's called everything bagel seasoning. |

Do white sweet potatoes taste different than orange ones? I cannot gag down the orange ones for the life of me, so maybe the white with the everything seasoning will work.

they have a softer flavor more like regular potatoes. even though they don't taste like regular potatoes.

I had roasted sweet potato for lunch today. I dice them up, roast them in a hot oven with drizzled on olive oil, garlic salt, pepper, Rosemary, and thyme. They're so delicious!

Thanks for letting me know where to find it in Costco. I have no idea how I've missed that before because it's something I totally would try. Ohhh and roasted sweet potatoes sound really good too! I've never cooked white ones before but I'm going to try both.

I try to avoid butter so I usually top baked sweet potatoes with coconut oil and sea salt. So delicious!
