I'm making a pork roast tonight which won't go over well with DH, he's not a fan of pork. Now I just need to decide what to make with it.

Hope it isn't too long before your cold starts to improve scrapmaven. We are going to have Spaghetti Carbonara and Ciabatta or garlic bread, with strawberries, raspberries, blueberries and Greek Yogurt for dessert. Quick and easy for a Monday.

Colds suck scrapmaven! Today is dd#1's 17th birthday so I think I'll cook something that she will actually eat Probably Lemon Cream Pasta with Chicken ... and red velvet cake because that is her fav too Here is a photo of Emma and our cat Baby:

scrapmaven I hope you feel better soon, colds stink. leannec Fun birthday dinner for leannec jr.! I am not sure what is going to happen today. The boy left this morning with his stomach bothering him, and the last thing he asked was if I would check him out if he wasn't feeling well. He has a tennis match (two actually, singles and doubles) so him coming home early is a bit of a thing as he won't be able to play (not that he would want to if he isn't feeling well.) So, all that to say-if he comes home, dinner will be upset stomach friendly. If not, I will play it by ear. How's that for indecisive?

I'm going out tonight. Two of my co-workers are in town on different projects, so I am having dinner with them. It is so fun to have colleagues in my hometown! My job is so weird in that I've worked with these people for years, but always in other cities across the country, not where any of us actually live.
One of them is on the same project that I'm working on in town, but I'm not with him this week. I'm working from home doing remote work on my Florida project. He was in town a few weeks ago and I cooked him dinner. It's nice to have a home-cooked dinner when you are on the road, and his wife thanked me for feeding him real food.
The other is one of my good friends. I am really excited to have her in town. We've even taken non-work related trips together, so I can't wait to show her my home. She's coming over to watch Survivor with me Wednesday.

We had hot ham and rolls yesterday so that may be what we have tonight. We will see. I really have to get to the store, but since was out the weekend before last with the flu I really fell behind on shopping! Now that I finally feel 100%, I should go to the store tonight so I can get dinners for the rest of the week.

My son requested tortellini and garlic bread. And since it was his idea, he's gonna be in the kitchen helping to make it. It's a really simple, heat n serve type meal so he's more than capable. Lol! I'm adding a side salad and cantaloupe to round it out as well.

We had grilled steak last night. Since I was down with a migraine much of the weekend, hubby cooked. And since today is rainy and yucky and Monday ... we are just going to do scrambled eggs with steak tonite.

We're going a little late since the boys have dentist appts out of town.

leannec, wishing Emma a very happy birthday. Thanks to everyone for the well wishes. A cold is such small stuff around here that I don't even give it a 2nd thought. Each day it warms my heart to have this thread w/my little Pea family. I hope that aKathy is smiling down at us.

I have a 4:30 doctor appointment and Dh was supposed to be going out with his two local brothers. We left it at fending for ourselves. There is leftover beef stew but I may pick up a Greek salad with grilled chicken.

Feel better scrapmaven! Trying some new stuff tonite. Older son requested Chicken Marsala, so I'll be giving that a whirl. And I've been dying to try Duchess Potatoes, so I'll be attempting those, too. Green salad as a vegetable.

I just figured out my menu for the week. Tonight it's Mexican bean casserole, I'm going to attempt to make my own enchilada sauce to go with it. Not fully sure on the veggies to serve with it. I'm getting bored with the winter veg selection, my fridge seems to be full of greens.

Garlic Potato Burgers Although very common ingredients, potatoes are also the most versatile ones. Their flavor works well with anything else, especially with garlic. Servings: 8-10 burgers Ingredients: 8 oz potatoes, grated 3 garlic cloves, minced 1 teaspoon dried thyme 1 teaspoon paprika 1/2 cup breadcrumbs 3/4 cup all purpose flour 2 tablespoons olive oil 2 tablespoons flax seeds, ground 4 tablespoons water Oil for frying Directions: In a small bowl, whisk the flax seeds with water and set them aside. Put the potatoes, garlic, thyme and paprika in a bowl and mix well. Stir in the oil, breadcrumbs and flour, then the flax seeds, and mix well to combine. Grease your hands and form small burgers. Set them aside. Heat a small quantity of vegetable oil in a frying pan and cook the burgers on each side for 5-7 minutes, flipping them over to evenly cook them. Serve the burgers on buns with your favorite toppings

We'll have last night's chicken spaghetti that I created with red sauce, a bit of cream, pesto, and cheese. I could not find a recipe without canned soup and I did not have any canned soup. I did not want to make a white sauce for it. We decided to eat eggs and toast last night so we did not eat the spaghetti yet. I did taste it, though, and it's pretty good. We'll also have a salad. And more oranges.

We're having spaghetti and garden veggie meatballs, which are just meatballs with a lot of teeny, tiny chopped veggies mixed in. My kids love them!

I am planning on making meatloaf baked in a sweet BBQ like sauce, mashed potatoes and sugar snap peas. Then we might have fresh strawberries for dessert.
