For DH it will be baked chicken thighs and a vegetable. I just looked at MFP and I don't have a lot of wiggle room left tonight, so I'm having cottage cheese and some fruit. I'll try for better meal planning via MFP tomorrow.

We're having a ground beef/brown rice/vegetable dish. I'm calling it "Why Did I Impulse Buy Two Zucchini?! ". I'll serve it with roasted green beans and cauliflower, bread, and red jello. I don't remember what the box said and I don't care enough to go out to the garbage to check.

I've got two pots of stuff going... a crockpot of pasta fagiole soup and a dutch oven full of chili. DH wants the chili so that's what's for dinner tonight. The rest will go in the freezer to enjoy later.

I'm going to attempt to make my own enchilada sauce Will you share your recipe if you "crack the code"? I have book group tonight, so I will have the final remnants of the chicken enchiladas. Please join me in a brief prayer for my safety, as this dish is approaching danger stage (in my opinion).

It's back to chilly today and has been raining off and on, so we planned one last batch of our favorite Turkey Chili. I'm ready for warm temps, but I will miss soup.

I am fixing burgers for the boys with potato salad, baked beans and potato chips. I will confess, I ate a bit of the potato salad and chips for lunch. I am not sure what I will eat. I bought some soup but don't feel like eating it. Lisa

leannec, this is a theology reading group. Right now, we are reading John Shelby Spong's book "The Fourth Gospel: Tales of a Jewish Mystic." We started the group year in September reading the Pope's encyclical on the environment, "Laudato Si." Not much easy reading, although Spong is a joy to read. Our discussions are pretty good, though!

I decided on a trip to Costco to commence shortly, so it'll be either Costco chicken or Costco hot dog for dinner instead of chicken noodle soup. If I don't check in tomorrow, I'll be scrapping and eating the chicken noodle soup.

Oven baked panko'd chicken breast. I season the panko with salt, pepper, and Parmesan before coating the chicken. Spinach pasta salad, bow tie paata cooked and cooled just a bit. Then toss in a package of fresh spinach, 6oz crumbled Gorgonzola, 1/2 cup of chopped pecans and then toss in a light balsamic vineagrette. Lastly an experiment off Food Network. Large portobellos on the grill. Toss in olive oil. Place on grill to brown edges. Mix balsamic vinegar, olive oil, Dijon mustard, salt, pepper, and minced garlic. Pour into opening of mushroom. They are grilling now, so fingers crossed it tastes as good as it looked on tv. Update with pic. Not the prettiest plate presentation. The mushroom turned out soooo yummy!!

Tonight must be bowtie pasta night because that is what we had, too! I thinly cut the grilled sausage and vegetables leftover from Saturday and tossed them with pesto sauce and some fresh basil.
