Dh might go out to lunch w/his team. If so, it'll be a gyoza and steamed rice night. If not, it'll be Tyler Florence's chicken paella.

In honor of St. Patrick's Day, we're having corned beef, cabbage and potatoes. Tomorrow we'll have Reuben sandwiches for lunch to use up the leftovers.

We are having pizza tonight. Corned Beef and Cabbage might happen on the weekend, but it is not a weekday meal in our house. Today mark's 3 years since FIL passed away, so we are all a little sad and out of sorts today. No one wants to put a lot of effort into dinner. We are all wearing green in his memory though - he was somewhat Irish, so DH and DS are as well. I'm not, but I loved him dearly and will always honor his memory.

I'm magically turning 8lbs. of beef into Burning Feather's Italian Beef, and planned on freezing all of it, but I couldn't come up with anything for dinner, so I'll serve some tonight with noodles, butternut squash, brussels sprouts, apple-cranberry sauce, and rolls. I need to make mint buttercream frosting (which I will tint green), then make ganache, for the dark chocolate mint cake.

I'd never heard of anyone, apart from folk in Ireland, celebrating St. Patrick's Day until I moved to US. On the radio this morning, the Irish DJ was explaining that corned beef and cabbage is a US thing too.
Anyway, being the rebel I am, I'm not wearing green and we're not having anything remotely Irish for dinner. Instead it's rosemary chicken with mushrooms, with rice and broccoli.

Corned beef, cabbage, potatoes and carrots here, too. I make it once a year, and this is the day, lol. Too bad nobody else in the family is as excited as I am.  For those that make this--do you cook the potatoes, carrots and cabbage in the same pot at the corned beef? Since I rarely make it, I can't remember from year to year what I do. The majority of the recipes I see say to put in the same pot, but my mom's telling me it'll all be too salty. So, how do you do it?

We went out last night, but I am not feeling cheeseburgers for tonight. I would love corned beef and cabbage, but I would be the only one to eat it! I am part Irish, I have my green on today. I may talk them into going out again tonight and I can get at least a Rueben out of the deal (even if it's Subway)!

My friend Lisa's favorite holiday was St. Patrick's Day. She LOVED it! 5 years ago, she passed away at 12:05am on March 18th (breast cancer). We said she held on because she wanted one more St. Patrick's Day, which she got. Since her passing and every year since, our group of friends always get together someplace and toast her. Tonight our group of friends are meeting for dinner at one of her favorite restaurants and one item on their menu tonight is Bangers and Mash - so...that is what I'm having for dinner - Bangers & Mash.

I WISH it was corned beef and cabbage tonight, but I haven't bought my corned beef yet! And now it probably isn't in sale anymore. grrrrr Anyway, my sister asked me to wait till next week to make it. Something quick and easy with ground beef tonight. I would just make cheeseburgers, but the 7yo only likes turkey burgers.  Either Korean beef or spaghetti. I will have the luxury of staying home and cooking tonight while the boys go to tae kwon do.

(I cook mine all in the same pot and it's one of the easiest meals on the planet. You just have to allow several hours for the corned beef to cook through.)

No one is home tonight except me so I'll probably have a salad. I did the corned beef last night. And had a corned beef sandwich for lunch.

Due to some Irish blood from my grandmother and it being cool here today, I have Irish stew in the crockpot and I will be making Irish Soda bread when I get home. I really wanted to make Colcannon but DH won't eat cabbage.

My SO made ground beef, frozen fresh mixed veggies, some sort of brown gravy, topped with mashed potatoes. It looked horrid but tasted surprisingly good. There's plenty, but I won't eat meat tomorrow and will wait till Sat for the rest. I'm generally not one to have a lot of sides with my meal. One or two things are plenty for me. Not sure if that's lazy or crazy !
