Tonight I'm going to use the roast chicken from Costco and make either lemon chicken pasta or chicken fajita pasta. I'll let dh choose. If it were my choice and I could eat it I'd make a nice, unhealthy mushroom, chicken fettucini alfredo. A girl can dream.

Absolutely no clue. Oldest ds is umping tonight and for a treat dh wants to take him to his favorite burger place for a late dinner (just the 2 of them). Which means it's just me and youngest ds at home. Maybe I'll have him decided whatever he wants. Which could be anything from a full-blown dinner to a bowl of cheerios (and I'm hoping for the latter)

Just got back in after a long walk along the beach - busy with it being the first day of the Easter long weekend holiday here and a bit chilly......but invigorating! - so we are going to have easy to prepare lightly smoked Scottish salmon and veg rice followed by individual cream cakes for dessert.

Easter dinner here today. Roast turkey, stuffing, gravey, mashed potatoes, asparagus, green salad, fresh berries with lemon cheesecake.
Hopefully there will be leftovers.

We stopped by Short Stop Po-Boy for their famous Roast Beef po-boy sandwich (dressed). It was as delicious as ever. Wish everyone could enjoy one of these in their life time.

I have the day off and when I used to get Good Friday off several years ago (the company I work at has been bought and sold a few times and holidays change) I started a tradition of going to the beach. So, dh took me to see the ocean and then we went to our favorite seafood restaurant where we shared a seafood platter with haddock, scallops, clams, French fries and onion rings. It was delicious and it's rather doubtful either of us will be very hungry for dinner.

We have a similar seafood restaurant at the beach, near where the river joins the sea, and thought of going there for lunch and to watch the ships, but it was extremely busy so doing the salmon at home won.

Just have to share that the Chicken Picatta that I made last night was a hit in my house with everyone except dd#2 Dd#1's boyfriend stayed for dinner and gobbled it down I'm a SAHM and his Mum works long hours so I think that he doesn't often get home cooked meals so it made me feel good to feed him something he liked ... he's really sweet ... wanna see a photo of them? OK! Anyway, tonight we're grilling steaks and salmon and I'm baking some home fries ... there will also be some raw veggies of some sort

It is a fend for yourself Friday. DD is working, DS starts Spring Break and will likely be out, so I plan on making myself a cheese & fruit plate and DH is always happy to empty containers of leftovers.

We need to eat from the freezer next week. It's getting loaded from bargains and coupons. Gotta plan better when I am shopping.

Well, I went to Costco last night and unfortunately I was starving by the time I got there. So I went home and made my chicken noodle soup but it wasn't done until 10:00 pm. I was dining Continental style. Tonight I was going to make a corned beef & Swiss sandwich but then I remembered, in my starving state last night, I had picked up a gigantic prepared shepherd's pie at Costco. Enough to feed me all weekend (and the rest of them have taken off on a spring-break road trip). So I think the leftover corned beef had better go in the freezer at this point. As usual, I have written a (very long, very boring) book! ETA forgot to say, those kids are adorable, leannec!

Cute photo leannec! We're having chicken quesadillas tonight with sliced avocado. I also have two mangoes so I think I'll serve that sliced as a side. And, if anyone wants one, a chocolate chip cookie from those I made yesterday. My mama is on her way here for the Easter weekend and I guarantee she'll eat a cookie!
