I agree! My family, on the other hand, is not looking forward to warmer weather. Meals around here in the summer are whatever I can get on the table with the least amount of time and effort. My husband works odd hours, 9am to 9-10pm. So I eat alone M-F and I am ready to just cook something on the grill with a veggie and call it dinner!!

We had tossed greens with tomatoes, mushrooms, carrots, and fried chicken nuggets. I made bleu cheese dressing. Very tasty! And, because it came up on another thread this week, the chicken was at room temp. leannec, nice pic! KelleeM, I'm jealous of the seafood! Spongemom Scrappants, enjoy visiting with your mom.

I am sooo jealous of those of you who mentioned being near a BEACH !!!!!!! Especially @kellem --the beach AND all that scrumptious seafood !!!! I had NO IDEA what we'd be having tonight, and definitely in too much pain to cook.....THEN I read everyones' posts and got hungry for soo many things!!! LOL!!! After getting over a BRIEF pity-party, I decided Red Lobster would be the closest thing to fresh seafood at the beach, but we're going to have that treat tomorrow since my pain levels are wayyy too high to go tonight! Thankfully, we have some yummy fish in the freezer, and I decided to "drown my sorrows" in mac -n-cheese. No Stouffers in the freezer (and I Jusssssst grocery shopped today!), so I've got homeade in the oven right now. I LOVE this recipe I got from my sis---the thing that makes it over-the-top yummy is Panko bread crumbs sauteed in butter and a bit of fresh garlic. I've posted it here several times, lemme find it again if anyone's interested. I actually just throw stuff together now to make mac -n-cheese instead of following an exact recipe anymore. BUT----LOL-----I hafta admit, my "thrown together" Roux did NOT come out as it should've! LOL...who CARES!!! It's all cheese and yumminess!!! P.S>......For those who want to try this---if you wanna follow the recipe, I HIGHLY recommend you replace the dry mustard powder (NO FLAVOR !!!) with dijon mustard......sooo much better! www.epicurious.com/recipes-menus/how-to-make-creamiest-dreamiest-cheesiest-mac-and-cheese-ever-articleETA: I've seveeeerely limited my intake of white flour & white sugar recently, and I know that going totally gluten-free should help my chronic pain A LOT !!!! We stopped by Short Stop Po-Boy for their famous Roast Beef po-boy sandwich (dressed). It was as delicious as ever. Wish everyone could enjoy one of these in their life time.
Can't wait to get one in a few weeks. Since I *know* what they taste like, my mouth is already watering.
