I'm making orange and choc chip hot cross buns from a recipe I stumbled upon and haven't tried before. In the ingredients list it calls for 3 oranges, juiced and zested, and unsalted butter....but in the instructions it only accounts for 2 of the oranges and tells you to add salt!! Also it says to add the butter, spices, zest, sugar to the flour then rub in until it's like breadcrumbs - well, that's much easier to do with just the butter and flour, before adding the zest etc but luckily I spotted that!
Heaven only knows how they'll turn out!

I only bake with unsalted butter. The additional salt you add is usually for help in rising (I think) not taste.

I'm not a baker, but I've seen the explanation that unsalted butter is called for in recipes so that you can control the amount of salt in the finished product by adding a measured amount yourself. I think lisacharlotte is right about the use of salt in baked products, too, so that's a second reason. Not sure how to explain about that third orange, though ...! Anyway, I love the combination of orange, chocolate, and spices. I hope the buns turn out great!

Salt doesn't make things rise, but it does help control how much things rise. It makes the binding of gluten stronger, but mostly, it's all about flavor!

Only way I could make sense of that recipe! They turned out out quite well even though the recipe is frustratingly unclear!

Well, it's been a strange day, kept thinking it was Sunday, kept losing track of time so consequently my timing was out as I started them way too late really and then we went to the pub so they're were a bit late into the second prove but hey ho!......fingers crossed I'll be cooking them in a while! scrappinwithoutpeas - I'll share the recipe id they're successful baylorgrad - you could be right. BarbaraUK, sounds like that's the one. If they turn out well I'll be making notes for next time

Well..... .....I had completely lost track of time and started them too late really, then we went out, which I'd forgotten we were doing, so by the time I got home, did the second prove and then baked them I couldn't be bothered to do the cross business so I just baked them plain. There was just about time to cool them to go into a tin before I went to bed so I haven't even had one yet! I will probably have one when I get home later so I'll let you know!

So I've just had a bun and it was tasty but the texture was too heavy...it was more like a scone quite honestly. That could well be my fault as I don't do any bread making and my yeast skills may have hampered the process, especially as they were left to prove for too long etc. but definitely a nice flavour and I might give them another go another time

Oaky, no problem, it was a choc orange scone. Sounds good to me! I heard that one of the big supermarkets here was selling choc orange hot cross buns. I went there last night to get some but there was only one left. I haven't had it yet. So I've just had a bun and it was tasty but the texture was too heavy...it was more like a scone quite honestly. That could well be my fault as I don't do any bread making and my yeast skills may have hampered the process, especially as they were left to prove for too long etc. but definitely a nice flavour and I might give them another go another time Yeast scares me, unless it's for something I'm making in my breadmaker, and I can just chuck it in and the machine does all the work - proving and kneading. That's why I've never tried making hot cross buns.

I've done a little bread making and the juice of 3 oranges sounds like a lot of liquid for bread dough--depending on the orange size it could be 1/3 to 1/2 cup per orange.
Is the juice of the 3rd orange maybe used in the glaze?? My great aunt used to make "orange blossoms" at Christmas. Orange sponge cakes baked in mini muffin tins and then thoroughly drenched in orange glaze--confectioner's sugar and orange juice. My family are Baptist teetotalers, but I'd bet these little cakes would be amazing with rum. I'm going to make some lemon and lime versions.

They sound delicious - but I agree recipes like that are frustrating! Agreed. I find that kind of thing all the time - an ingredient is listed but they fail to put it in the recipe, so you're not sure when to add it or some other such nonsense.
