I'm planning on making some desserts for my daughter's Confirmation in a couple of weeks. One I want to make is rum balls. Can I substitute rum extract for the actual rum? If so, would it be a 1:1 substitution or do I increase/decrease it?

You probably could, but it definitely wouldn't be a 1 to 1 substitution. I would search online to find out the ratio. I wouldn't recommend doing this, though - your end product will be so much better if you use the real thing.

Honestly, I would choose some other flavoring. Like vanilla extract, rum extract also contains alcohol. You feed the kids rum balls and they tell their parents, who call you to complain, you tell them it was only rum extract and they say, "That's still alcoholic!" even though, really, it isn't enough alcohol to intoxicate a flea.
i would just find something else that doesn't sound boozy. Peppermint extract? Orange extract?
And yeah, I think you'd use less extract than you would of the real thing. But I don't know the right amount.

For underage kids, I wouldn't do rum balls. There's lots of other great flavoring choices that would be better for kids.

The thing about rum balls is that the rum is the only moisture. I don't think it would work well at all with an extract.
Why not do Russian Tea Cakes/Mexican Wedding Cookies? it is a similar style cookie and has no alcohol.

My sister makes them, and I wouldn't recommend them for kids or a kid type event. I would choose something else. I don't even like them myself because I don't drink and the rum taste is so strong. I could see where some kids could end up going home smelling like they've been drinking after eating them!
