Hey everyone! My family is here, there and everywhere tonight so that means no cooking for me I'm going to the ballet to see Romeo and Juliet with a friend tonight and I'll grab Subway before I go ... and we'll drink wine while we're there Dd#2 is with Grandma cattle penning this weekend so she's doing her own thing Dh and dd#1 are going over to Nana's to celebrate her birthday ... I bought her a beautiful bouquet of flowers for them to take ... no idea what they will be eating ... What's on your menu tonight?

Cleaning out the fridge today so we're having more leftovers; salad, chicken casserole, veggies for me, grilled lunchmeat/cheese sandwich and veggies for DH, and salad if he wants.

We are having pan seared filet, burgundy mushrooms and onions, roasted asparagus, broccoli cauliflower salad and sweet potato fries.

Red snapper a la Joy, zucchini and a green salad.
I put the snapper filets in a glass pan, sprinkle with salt/pepper/red pepper, add a splash of Lea & Perrins and some lemon juice. Spoon on a thin layer of Creamy Italian salad dressing (Marie's stopped selling it in our grocery and I'm not as happy with the bottle I found at Safeway) and spread it around. Top with shredded mozzarella and chedder cheese. Bake for 5 minutes in a 475-500 degree oven. Take out and top with crushed Lay's Ruffles potato chips. Bake an additional 10 minutes.
Yummy!

We decided to skip church...I have been up since 3:00 this morning (worried about dd who had emergency gall bladder surgery this morning after being admitted from the ER last night). We stopped for some Chinese take out on our way home from visiting my Dad this morning and right now I'm not especially hungry but we had decided this morning to get a pizza tonight so we'll do that when dh is ready to eat. Happy Saturday! We are eating like normal people tonight. Salmon, wild rice, broccoli. It's been a perfect spring day here and we both got our hands in the dirt. I love getting back in the yard!

Oh, KelleeM, I'm so sorry to hear about your dd! Did she have problems while pregnant? It must be really hard not taking care of both dd and dgd. My food is still being dictated by my big city grocery run on Thursday. I bought a turkey breast at Trader Joe's, and I was planning on having that tomorrow, but a family funeral is interfering with my plans. All of our 7 houseguest visitors from the mainland have finally gone home so it is quiet here. Poor DH was tour guide, driving them all over the island to various activities (well, I drove some too since all 9 of us wouldn't fit in one vehicle).
It's going to be a mostly leftover night, baked ham and coconut chicken curry. think I will roast some zoodles and add my new favorite topping of sriracha and sunflower nut butter and a fresh green salad to go with. And wine!
Kelli, I hope all gets better for your DD and you get a chance to go see her soon.

KelleeM, healing prayers for your dd. I end up eating at Paradise Bakery last night. DS1 ate leftover Chipotle, and DS2 ate pizza at a friend's. Tonight, it's only DS1 and I. DS2 is at another bday party. I am not sure yet what we will eat. I might make him shrimp scampi since DS2 doesn't like it. Lisa

Dh was in a softball tournament today and ds had field cleanup for baseball earlier and undetermined plans for later. As it turns out, everyone will be home at dinnertime, so I think I may send ds to pick up BW' s for us.

We are having that baked ham that we didn't have for Easter because we went to visit DD. But it's a simplified menu since it's not actually Easter
So baked ham with potatoes au gratin and mixed veggies.

It's just me and the girls tonight, DH is racing. We are cleaning and packing for vacation and we had a late lunch, so maybe cereal or egg sandwiches. Something quick, easy and not a mess to clean up!

KelleeM I hope your dd is feeling better soon. I had the same surgery after having my first. Doc told me he sees a lot of new moms. We had chicken, asparagus, peas, salad, and baked potatoes. I have a new love for baked chicken breasts since utilizing the brining recipe posted on these threads.
