Tonight is a Fend night. We have a fridge bursting w/leftovers and a chef bursting w/happiness at the thought of not cooking tonight.

Leftovers for me too! Last night was one of the dreaded sports banquets, but this particular coach is so amazing and she planned it at a restaurant we all like. It was so much fun!! The good news is that I ate half of my dinner, the boy ate half of his dinner and now I have enough to have a very big lunch-big enough to last me through the rest of the day. Yay leftovers!!

lol scrapmaven - I like your name for it... "Fend night"... I call it "yoyo night" (your on your own.) Anyway, tonight we're having broiled ham steak, homemade mac & cheese, beets, and applesauce. There's a bit of strawberry parfait leftover from last night that's up for dessert.

I've been thinking about tuna noodle casserole since it was mentioned here a few weeks ago so, guess what we're having for dinner? I'll serve it with roasted orange and white cauliflower, sauteed green beans and shallots, fresh pineapple chunks, strawberry jello, Italian bread, and chocolate cupcakes for dessert.

I have no clue. Tuna casserole does sound yummy, but I would need a store run and I'm just not sure that will happen today.
I have some beef tips in gravy I could thaw and serve with rice and a veg.
DB has no appetite, so I'm usually cooking for one, which I hate to do. Too many left overs.
Perhaps I need to get a cooking for one cook book. I learned to cook for a large family and even with practice, I typically make too much.

Off script here. I was planning on making a strata, and I bought the bread ahead, so that it would be stale. It's not stale, it's moldy! Yuck!
Plan B may be to make pizza. I think that I have required ingredients.

I'm going to make a pizza, but I'm planning to use a combination of regular and white bean hummus as the "spread" on the crust, instead of regular pizza sauce. I'll top it with cheese and some sort of vegetable combination (I'll see what all I have in the fridge), and I've still got fresh cantaloupe chunks to go along with it.

I am a really happy woman today. Well, most days, I am very happy but today especially so. I have been working a ton lately and have not had a day off in like three weeks. I even worked on Easter. So I am taking a "me" day and have a desperately needed hair cut scheduled in less than an hour. I already bought Dutch Bros. and a cranberry/orange muffin top - I love how they call it a "muffin top" - oh the irony! Then I am going to get a pedi and go to the thrift store. Then to lunch at the Greek restaurant and then to see My Big Fat Greek Wedding 2 and eat lots of popcorn. Lots. So I am getting the boys fast food for dinner, but it might be Chick Fil A. I won't eat. I am still working a little but mostly relaxing. Bliss. Lisa

We are taking carry out chicken and some wonderful cookies from a local bakery to visit my DH's Aunt with his BIL and SIL. She is in the beginning stages of Alzheimer's and her husband had a severe stroke, is depressed and has full blown Alzheimer's with a mean attitude. They are preparing to bring him home with Hospice soon and she needs a little break before more chaos happens in her life. Her daughters are around to help her and they will have in-home care.

My DH has been out of the country for almost a week, so dd and I have been enjoying a no cook, fend for yourself WEEK. Awesome. We are running out of simple things to make though, so I may run to the store or papa murphy's tonight. Turning on the oven counts as cooking, right?

Well, I had planned on tacos, but had a request for a meal with no cheese - we have had manicotti which is super cheesy and paninis with cheese the past few nights. So, I think I have some frozen chicken tenders and some fries or maybe ramen noodles (judge away, they are a super simple side dish!)

Side note: yesterday's dinner was amazing (pardon the Styrofoam, it's our fancy baseball game China) Pork loin with roasted lavender carrots and potatoes, sweet kale salad and quinoa salad with peanut sauce. I impressed myself...I think I ate ten carrots. Ha Attachments:
