Tonight is a Fend night. We have a fridge bursting w/leftovers and a chef bursting w/happiness at the thought of not cooking tonight. What's on your menu? Have a great day everyone. We call those FFY (fend for yourself) nights or "night of 1,000 choices," lol. DS goes straight from sailing to baseball so meatball subs made with the meatballs from last night's spaghetti since we can take that to him at pick-up and he can eat on the way to baseball. I am refusing to do fast food as much as I can.

Mexican beef and rice bowls with guacamole. And fresh fruit salad.
Thanks for the thread.

Tball practice tonight from 5-6! It's such a gorgeous spring day - low 70's with barely any wind!! Loving it! I cooked some chicken breasts this afternoon, made coleslaw and chopped up a watermelon. Will have chicken wraps and watermelon after practice.

I am a really happy woman today. Well, most days, I am very happy but today especially so. I have been working a ton lately and have not had a day off in like three weeks. I even worked on Easter. So I am taking a "me" day and have a desperately needed hair cut scheduled in less than an hour. I already bought Dutch Bros. and a cranberry/orange muffin top - I love how they call it a "muffin top" - oh the irony! Then I am going to get a pedi and go to the thrift store. Then to lunch at the Greek restaurant and then to see My Big Fat Greek Wedding 2 and eat lots of popcorn. Lots. So I am getting the boys fast food for dinner, but it might be Chick Fil A. I won't eat. I am still working a little but mostly relaxing. Bliss. Lisa Oh goodness, that sounds lovely and you totally deserve it! Well, expect for the DB (ick) Enjoy your day!!

My DH has been out of the country for almost a week, so dd and I have been enjoying a no cook, fend for yourself WEEK. Awesome. We are running out of simple things to make though, so I may run to the store or papa murphy's tonight. Turning on the oven counts as cooking, right?Ummmm, yeah!! So now I can have 3 no-cook nites in my house since I now have 3 different things to call them! 'Night of 1000 choices' is a great addition to fend nite & yoyo. Spaghetti Carbonara here tonite. Wait? Didn't I make that last nite? Nope. Older son worked and requested that I make it tonite when he's home. So last nite younger son & I had hot dogs and Super Easy Mac & Cheese. It's not one pot on the stove, but it is one baking dish in the oven, is made w/stuff I almost always have on hand and is pretty yummy. It's a keeper.

Baked chicken thighs, rice pilaf & mixed veggies. Not much going on tonight which is great as I'm exhausted from work.

We ended up having tortellini in a red sauce last night ... Tonight we are going to MIL's house and I'm making dinner for all of us ... We're having pork cutlets, rice and tossed salad

I grilled chicken and paired it with bow tie pasta and peas in a Parmesan sauce and roasted broccoli. The pasta was a leftover frozen from last week.

Because I know everyone is hanging on my every post on the dinner threads , I will confess that we are once again not having Spaghetti Carbonara. Older son got pulled in to work a double, so I am putting it off until he can be home to eat it with us. The bacon is dated May 16, so even w/out freezing it I'm good for a while. Tonite is our big TV nite (Survivor, both Criminal Minds), so in an effort to avoid making dishes that I'll have to clean up later, I'm taking the easy way out and we're rolling thru a few drive thrus.

I'm having chicken & veggie soup I found in the freezer, and if that's not enough, I'll have a little of the leftover Italian beef. Since I started with a 5.5 lb chuck roast, this stuff may go on forever. gottapeanow, your day sounds lovely. I, on the other hand, had a mammogram.
