Shrimp and spicy cheese grits!! I fixed it last week and we loved it. DH asked for it to be on the menu rotation. Even though no one has asked, here is the recipe.
Spicy Cheese Grits
1 cup grits 1cup heavy cream 2 cups milk Salt/pepper
Cook according to directions. Add 1 cup Monterey Jack Cheese and I can Rotel tomatoes and 1 crushed garlic clove. Bake in a casserole dish for 15 mins at 350.
Sauté peeled, deveined shrimp in butter till pink, sprinkle Old Bay Seasoning on shrimp as it cooks. I also add green onions to the shrimp as it cooks.
Enjoy! Even grits haters love this recipe because it is sooo creamy.

I'm going to make Lentil, Rice & Veggie Bake, a new recipe. It calls for some possibly weird herbs/spices, so we'll see how it turns out. I've got some whole wheat rolls from the bakery that I can serve along with it.

Found a cauliflower in the fridge, so cauliflower soup (with bacon!!! I loooove bacon!!) for me, and taco soup for the rest of the family (because those weirdos don't like cauliflower). And brownies for dessert...just because.

Believe it or not, I think I'm making chicken spaghetti again today. My sister didn't get enough already. Her DH did get out of the hospital on Monday and he says he feels all back to normal now. I might actually eat something different, though. Not feeling the love again so soon. Also not feeling like Italian beef again. LOL

I'm going to make some Italian sausage and tortellini soup. It's one of our family favorites.
Even though I could do without the carbs, I'm going to bake some bread. I feel the need to knead.

Last night's Plan B didn't work out, so we're having pizza tonight. One will be sausage and mushroom, and the other will be a white pizza with zucchini and grape tomatoes.

Tonight is leftover night. We have baked ziti from last night, turkey and twice baked potatoes from the night before, and other stuff that needs to be eaten before it turns.

I'm making a new recipe, Egg Roll Stir Fry. I've had that recipe bookmarked for awhile, but when sweetpeasmom posted on a dinner thread saying she made it and her family gave it a thumbs up, it moved up on the "recipes to try" list. Since I will end up adding more vegetables to the stir fry than the recipe calls for, I will just roast some broccoli while I'm cooking the rice in the oven. (I'm rice-challenged and cooking it in the oven is the only way I can successfully make it. <shurg>) I'll also serve fresh cantaloupe & pineapple chunks, bread (because you can never have enough carbs), and whatever random cookies I find in the freezer.

I am trying a new recipe that I saw on Pinterest called Tuscan Chicken Penne Pasta. I will make a salad and have some French bread.
I hope it is good. The last few new recipes I tried were all clunkers!

Still a sick ward. I made a salad for lunch with chicken, pear, blue cheese and walnuts before I remembered I'm meeting my mom for lunch. So I'll have the salad tonight. BF did not eat dinner last night, but did tell me he had a DQ Blizzard at 2 p.m.

I had some sourdough starter crying out to be made into a loaf so I just pulled that out of the oven. Going to have fish cakes again with more asparagus.
Lots of us making bread or eating it today. Sustenance for me. I secretly make it for dinner so I can use up the leftovers in French toast for breakfast. Maple syrup and butter, you know...

DH is put DS has practice and I'm dropping him off a sub so I'm on my own. I'll see what's in fridge when I get home and eat whatever. If all else fails I can have an egg.

Dd#1's boyfriend will be here for dinner tonight ... remember that I said that I love feeding this kid because I don't think he gets many home cooked meals at home? Anyway, we're having homemade burgers, hot dogs and homefries with some random raw veggies

I put an eye of the round roast in the oven about 20 minutes ago and the house already smells SO good. I'm trying the high heat method where you preheat to 500 put roast in and turn down to 475 for 21 min then turn the oven off and don't peek for 2 1/2 hours. Will have mashed posatoes and green beans with it.

The LAST of the leftover meatloaf made into open faced sandwiches along with leftover mashed potatoes and gravy, lettuce & tomato & fried okra. The fridge is almost cleaned out except for the veggie tray I got today at Walmart and bacon (for BLT's later this weekend). We will be out and about tomorrow for a doctor appointment so eating out is on the agenda.

My "me" day was sooooo enjoyable! The only problem was that I ran out of time to eat lunch first, so I "had" to eat popcorn for lunch. What a terrible problem! I finally ate "real" food at 8 p.m. - a great salad from Chick Fil A. I bought some chicken poppers last night to feed the kids tonight. We will have broccoli and either leftover pasta or baked potatoes. Lisa

I just came back from a late lunch with a friend. I had the salad and half sandwich option, but even that put me over the top for my 21 day fix diet. If I'm even hungry later, I'll just munch on some carrots and cucumbers. DH will have rice and hopefully his last rice dinner for awhile. His gallbladder comes out tomorrow afternoon and he's already dreaming of a huge messy grilled cheese sandwich. Not sure how soon that will happen. Just between you and me...I'll kinda miss his BRAT diet; it's made dinner prep super easy.

Was planning on Chick-Fil-A but after a doctors appointment, we stopped at Walmart to pick up ONE item. Well, you know how that goes, so after finding several things that our usual grocery doesn't carry, we've got a menu change. Tonight's going to be chicken veggie stir-fry w/Asian noodles and cute little individual pies for dessert - pecan for DH and apple for me.

I usually do a baked cod (copycat from red lobster) with the tomatoes and parm but tonight ..I found a cod recipe with Ritz crackers and white wine. Serving with Roasted broccoli and carrots and a tater served with my charm and a smile.

This is now officially on my menu (sans the Rotel, I don't like tomatoes.) I also make make my grits with half and half, so this works for me. As for dinner around here, it is just me, so it is hummus and chips with a side of chocolate cake.

I was going to make chicken tacos, but then saw a recipe for grilled lime chili chicken fajita salad and made that instead. My son just ate the chicken with a few veggies as tacos, but my DH and I ate it as a salad. It was SO GOOD and my husband and I both agreed it tasted like a salad you would order at a restaurant. WIN!
