My kids have been bugging me to make Carbonara recently, but I've totally gone off my usual recipe. It's a bit too eggy, and not quite smooth enough. How do you make Carbonara?

I use RAchel Ray recipe. I use pancetta not bacon and I add some red pepper flakes at the end. As far as the two eggy- do you temper the egg yolks? So they don't curdle and turn into scrambled eggs

I mix two eggs & one egg yolk, about 2/3 of a cup of grated parmesan, and a bit of nutmeg in a large bowl. Then I mix in the cooked pasta and bacon.
I haven't made it in a while. It's so good, but so bad for you. My kids love it and I have one nephew that requests it when he visits.
