Hi everyone! The drag show that I saw last night was so excellent ... funny as hell Everyone is home for dinner in my house tonight so I'm making pot roast, gravy, mashed potatoes and peas ... something all four of us will actually eat Comfort food for a Sunday What's on your menu tonight?

I made enough dinner last night for 2 days. YAY. So, we are having Lemon-garlic chicken, basmati rice, sauteed mushrooms and probably sauteed peppers (which I'll cook tonight).

Since I was out of town yesterday, I really need to cook something tonight. I can't decide if it will be chicken tikka masala or the flat iron steak I picked up yesterday. Think I may be leaning to the steak with roasted peppers, onions and mushrooms. Maybe even homemade bread.

Crock pot London broil
New recipe
1 (2lb ) London broil 1 onion sliced 2 cups baby carrots 2 cloves garlic pressed 1can cream of mushroom soup 1 packet or cube beef bullion 1 tbsp curry powder spice blend ( I used Thai green curry blend ) 1 packet pinion soup mix( always goodmans in our house ) 1/2 cup water * may need to add more later but I usually have plenty of liquid depends how your pot works
Cook on high for 6 hours Pull apart beef. Serve over potatoes
I've done stuff like this before but the curry is a new twist for us I'll see how it comes out and report back.
PS it's not my recipe it's a recipe from somewhere on the internet I wrote it down months ago and couldn't find it again to check directions.

All of these meals sound really delicious, ladies. We will go to a restaurant after church that's a Phoenix icon. It closed about two years ago but recently reopened at a new location. Later, the kids will be starving, but I refuse to cook dinner on Sunday nights. Especially since I have work that I need to finish later today. They will pick on cereal, left-over roasted chicken, PB sandwiches or possibly even egg salad if I get that made. Lisa

I'm not sure yet. I plan on throwing a chicken in the crock pot shortly which will get deboned and then frozen into portions for later. I will use some of it for me to eat tonight-but I am not sure what I am going to do with it yet.
The boy won't be home in time for dinner, so whatever I end up with is just for me. I make some kind of casserole so that I can freeze some of it for later.

I haven't really cooked in almost a week. DB isn't eating at all so I find I either don't eat or graze on whatever I find that's quick.
I'm going to try to make real food today and split up whatever I make into individual meals so I can nuke and go.
Perhaps I'll toss some chicken on a sheet pan with sime veggies and roast the lot. Always good left over.

We're having a New England boiled dinner. I have the boneless smoked shoulder simmering now and turnip, carrots, cabbage and potatoes all ready to add at the appropriate times. I can't wait to eat...it's one of my favorites!

Potatoes and onions were on sale at the grocery this week so I'll be busy for the next couple of days stocking the freezer with mashed potatoes, baked potato soup, french onion soup, and chopped onions. Plus, we have a couple of pounds of bacon that needs cooking/freezing. Soooo, just a quickie breakfast dinner tonight of bacon, scrambled eggs, fried potatoes w/onion, and English muffins w/tomato jam.

Thanks to yesterday's thread, I have a desire for spaghetti and meatballs. So I'm baking meatballs to add to a thick red sauce full of mushrooms. I can't wait. It's always been one of my favorite meals.

We are having Black Bean and Rice Burritos. I've already got them made, and just need to toss them in the oven when it's time. This is an odd combo, but I'm going to serve them with steamed carrots, becsuse I bought an enormous bag of carrots yesterday.

Schedules and routines are all out of whack on Sundays and people end up eating lunch late and then want dinner later in the evening. Unfortunately for them, I refuse to cook, then clean up, late in the evening so I plan something that they, themselves, can heat and clean up easily.
All that to say that I pulled some Vegetable Chili out of the freezer for dinner. I thought about making cornbread to go with it, but nope. That's not happening. marianne , I didn't want to comment on yesterday's thread and bump it up because I get confused when two dinner threads show up on page 1. I was so hoping you had some trick to freezing potatoes. I guess they'll remain on my list of foods that simply do not freeze/thaw well.

I marinated some defrosted raw shrimp in the recipe below. Going to bake it later. I also have some bread dough in the refrigerator - I'll bake that, too. Broccoli. I want chocolate cake, but my blood sugar probably does not.
Ingredients: 1/2 cup butter, 4 Tbsp. Heinz chili Sauce, 3 Tbsp. olive oil, 2 Tbsp. Worcestershire, 2 Tbsp. lemon juice, 1 Tbsp. fresh parsley (I used 1 tsp. dried), 1 1/2 tsp. cayenne pepper, 1 1/2 tsp. Liquid Smoke, 1 tsp. paprika, 1 tsp. oregano, 1/2 tsp. Tabasco, 5 cloves minced or grated garlic.
Combine all ingredients and simmer on top of the stove for about 10 minutes. Cool sauce. Arrange 2 pounds of shrimp, peeled and deveined, in a casserole dish. Pour cooled sauce over the top and refrigerate for at least 4 hours. Bake at 400 degrees for 15-20 minutes. Serve with crusty bread.
Maybe a dark chocolate chip would suffice. Or not.

We're having coconut chicken curry over rice. I just threw everything for the curry in the crockpot. DH saw me as I was adding a little cilantro to the sauce. He despises cilantro, but I always put it in and he's never noticed. Let's see if he can suddenly taste it now that he knows it's in there.

I'd love to be able to freeze scalloped potatoes, etc. but I don't even freeze vegetable soup with potatoes because they turn all mealy and mushy. I'm with you... they'll just have to stay on my "eh, not so much" list too. P.S. - took the leftover casserole out of the freezer - guess what's for dinner tomorrow?

Ok I just shredded the meat, and snuck a taste of the dinner. It fell apart very easily. It's really good. Not a curry but that definitely spiced up the mushroom soup. Can't wait to eat dinner. Though if I did it again I might halve the onion soup mix. It's very oniony. But good.
