We're making sweet tea brined pork chops on the grill with asparagus and baked potatoes. I've also made a key lime pie for the first time in at least 24 years. Juicing those tiny key limes was crazy! Actually -- to be honest -- the last time I made a lime pie, it wasn't *key* lime pie. That was, like, 1992 or something. I had never had pesto on anything, and you couldn't get a key lime in East Tennessee. We didn't have balsamic vinegar, for crying out loud, so we certainly didn't have bottled key lime juice. I'm sure I used giant, ordinary limes. I prefer key lime pie in a regular pie crust. The graham cracker crust is overwhelming for the filling, IMHO. So I baked a pie crust for this adventure. And none of this would be possible if I hadn't felt a little under the weather this morning. DH kept asking me if I was going to go to work, and I kept saying, "I just feel a *little* off. This isn't bad enough to stay home." He finally said, "You sound like me. And that's not an endorsement." I turned right around, went right back into the house, put my pj's back on, and went back to bed. Now I feel fine, *and* I'll be dining on key lime pie tonight! Gotta go wash the dishes..... I love key lime pie. LOVE IT. I used to make it all the time-my older boy thinks it is the greatest thing that has ever been invented. I sometimes make individual key lime parfaits (it uses graham cracker crumbs) which are fun to take to parties and book club. But I admit, I more often use the bottled key lime juice (Nellie and Joe's)-I am too lazy to juice those little suckers. As for dinner, I suppose it is about that time for me to start thinking about it.

I took some chicken breasts and tossed some artichoke/garlic salsa on them. Going to also toss more artichokes on them before they are done. I think I will make some rice too..

I had oral surgery today so I am not feeling like cooking. We had taco night yesterday, so there are some leftovers from that; there are also other bits and pieces in the fridge, so they're on their own. My tongue feels like it's the size of a watermelon, so I won't be eating...when I do, probably scrambled eggs.

If anyone is checking back, I just wanted to say the Melissa D'Arabian recipe I linked for Pork Carnitas was very good. I highly recommend it.

Alrighty then - checking back in to report on desertgirl shrimp dish. Delicious! Just the right amount of spicy and flavor. DH said "don't lose this recipe." This one is a keeper. Thanks much desertgirl!

We are having baked salmon, almond green beans & Basmati rice. I'm going to track down desertgirl's shrimp recipe - it sounds like something I need to try.
