I'm going to Costco so that I can pick up a roast chicken tortilla soup totally out of the blue that I need for tomorrow's soup. That means that I'll also get a pizza for tonight's dinner. Last night I made chicken tortilla soup, totally out of the blue.

It's dh's birthday today so I asked him what he wanted for dinner ... the answer was "Whatever" My problem is that his fav dishes are one's that require him to do a good portion of the cooking ... grilling or something like roast beef ... he makes an amazing roast beef and Yorkshire pudding So I've decided that we are having pizza from a hole in the wall place that we really like called "The Place" Dd#1 and her boyfriend are going to make a chocolate cake after school as well ... I'm afraid to see what my kitchen will look like after that

I'm making potato soup but since DH'S diet is still very restrictive about fat, I'm trying a recipe that calls for Greek yogurt in place of sour cream and heavy cream. Hmmm...curious to see how this tastes.

Not pizza! Finally, the last of the mega pizza supply is gone.
I don't know yet what's for dinner. I have a meeting after work that could run really long. I'll text my husband when I'm done and see if he's home yet and if he's eaten. I may end up just foraging for myself or stopping to get something on the way home.

We are having Truck Stop Beans and Cornbread with a salad. In case anyone is interested. Omit the meat and you have a great vegan dish.
1 # Large white dried lima beans Ham Hock onion diced garlic chili powder S & P to taste 1 can stewed tomatoes 1 can tomato paste 6-8 slices bacon
Soak beans overnight. In large pot add beans, ham hock, onion, garlic, chili powder, salt & pepper to taste. Cook aprx 2 hours until beans are done. Drain beans reserving juice. Dice up ham pieces. Mix the tomatoes and tomato paste with beans, adding some of the juice to make them thin - not as thin as pancake batter though. Taste and adjust seasonings. Pour into 9 x 13 pan and layer bacon on top. Cook covered at 350 about 30 minutes, remove foil, cook 20 mins longer until bacon browns. Serve with your favorite cornbread.

No idea. Maybe I will take out a pound of ground beef now and see what I feel like in eight hours. Or maybe I will make one of the frozen things I keep buying at Costco and then just storing forever in the freezer. Last sat night we ended up going to my favorite Mexican restaurant for dinner. That put me in a good mood. And I bought, so that put DS and his GF in a good mood.

I accidentally left a package of mexican rice on top of the freezer yesterday when I was rummaging around for the the turkey and stuffing to make last night's dinner. I noticed it before it was all the way thawed, but too thawed to put back in the freezer, so tonight will be Taco Tuesday--tacos and mexican rice. Happy Birthday to your dh, leannec ! Thanks for the recipe, jassy ! It looks like something my family would enjoy.

The white chicken chili that I made turned out delicious. Oldest ds was ranting and raving over how delicious it was. I was happy.
I still have a bit left.
So the kids can eat that or taco Tues. tonight. I would really like some good ceviche, but I am not sure where to get it. I need to find a place.

I'm making the shrimp recipe desertgirl posted the other day, it's marinating in the fridge now. We'll have parmesan risotto, home-made cole slaw, and a green salad to go along. I'm looking forward to that shrimp! Happy Birthday wishes to your DH, leannec !

We're making sweet tea brined pork chops on the grill with asparagus and baked potatoes. I've also made a key lime pie for the first time in at least 24 years. Juicing those tiny key limes was crazy!
Actually -- to be honest -- the last time I made a lime pie, it wasn't *key* lime pie. That was, like, 1992 or something. I had never had pesto on anything, and you couldn't get a key lime in East Tennessee. We didn't have balsamic vinegar, for crying out loud, so we certainly didn't have bottled key lime juice. I'm sure I used giant, ordinary limes.
I prefer key lime pie in a regular pie crust. The graham cracker crust is overwhelming for the filling, IMHO. So I baked a pie crust for this adventure.
And none of this would be possible if I hadn't felt a little under the weather this morning. DH kept asking me if I was going to go to work, and I kept saying, "I just feel a *little* off. This isn't bad enough to stay home."
He finally said, "You sound like me. And that's not an endorsement."
I turned right around, went right back into the house, put my pj's back on, and went back to bed. Now I feel fine, *and* I'll be dining on key lime pie tonight!
Gotta go wash the dishes.....

so tonight will be Taco Tuesday We're doing a version of that. I'm making Melissa D'Arabian's Pork Carnitas recipe. We'll tuck the pork into flour tortillas with avocados and I have some mangoes to slice on the side. Plus I picked up some gorgeous strawberries that I'm headed into the kitchen to dip in chocolate -- one of DH's favorite treats.

no clue.. I have fought a headache all day, lovely allergy season, even my face hurts. I am however making some potato salad right now, so I will have that if nothing else lol..
In all reality we'll likly have the frozen tombstone pizza or frozen lasange

I nuked him a hamburger to go with his onion rings and I ate the fried veggies with some cheese. Anything not to mess up dishes or clothes right now. I'm hoping this plumbing 'situation' will be over soon.
