Hey everyone! Dh and I are going to watch dd#2 cattle pen this afternoon (a rodeo sport) ... it is about an hour south of the city so it's a bit of a hike since we live in the NW part of Calgary ... oh well, time to listen to Country music on the radio Before we do that we're going to a Mercedes dealership because dh has it in his head that we should sell our perfectly beautiful Ford F150 to buy an SUV ... I really don't care either way but hanging out in car dealerships is not my idea of a good time Anyway, no idea what we'll be eating for dinner tonight ... take out probably ... or we might go to a movie and just have popcorn What's on your menu tonight?

We're going to church at 5:00 and BIL and SIL are joining us for the first time in too long. We'll go to our favorite little place afterwards. I'm thinking about a Greek salad with grilled chicken. Dh has taken a liking to their garden salad with grilled shrimp.
And in case anyone is interested, we ended up with Chinese take out last night after dh debated trying KFC again...it's been years but every time we eat it we suffer so we opted out!

It has been a busy Saturday and we are soon going to have Chicken Masala, Basmati rice, onion Bhajis, Naan bread and mini poppadums followed by coconut meringue and peaches.

My niece, her husband and their 10-month daughter arrive from WV today! Yay! This is their first long trip with the baby, so who knows when they'll get here. She's going to text me when they're an hour away, and we'll fire up the grill. We'll have burgers, chicken and veggies. And she requested my mac 'n cheese, so we'll have that, too. But not grilled.

Still celebrating normal meals at our house. Tonight I'll make a spinach/red pepper/mushroom quiche with a side salad. Also attempting a quinoa salad with a recipe from a recent thread. I just can't seem to get quinoa right.

Quinoa is on my "will try sometime"-list, but I'm unsure if my fussy eaters will like it. Today we had fried mackerel, cucumber salad, sour cream and potatoes. No dessert tonight, but I thiiiink I'm going to make lemon mousse tomorrow.

I'm waaay low on my supply of chicken stock so we're killing two birds with one stone tonight... rotisserue chicken (so I can collect the carcass!) roast sweet potatoes, broccoli, and a salad. Peaches for dessert.

We are camping! Finally a gorgeous day to enjoy being outside. We are cooking burgers over the campfire along with grilled vegetables. I made a kale salad and we will have s'mores for dessert. Yum! Hope everyone is enjoying their weekend.

Thanks to dh's sinus surgery yesterday and the soft food he has to eat over the next week we're going for Vietnamese tonight. It's really too warm for a bowl of pho, but oh well, at least I don't have to cook.

We had home-made pizzas with whatever was hanging around in the fridge: salami, bacon, capsicum, mushrooms, cheese, onion and the leftover capsicum & cream cheese mix from the fajita-stuffed chicken I made the other night.

I have some things in the freezer I need to eat. But, I'm getting family take out. Lol! My friend's birthday is today and everyone is goibg over for a bbq and cake. I'm home with DB, so one of my girls will bring me left overs. I think it's cheeseburger and potato salad.

Full day for us ~ our company's Shred-a-Thon this morning, Warriors game against the Rockets and Giants game this evening against the Dodgers. We're having baked chicken thighs, green salad and fruit salad. (After all the fried food in NOLA, I'm trying to ease back into healthy!)

Everyone went their own directions last night. My oldest ate pizza late with friends. My youngest ate Carl's Jr. with his dad. I got Thai take-out - pa nang curry. So far, it is the best thing that I have had from the Thai place. And I easily make two meals out of it, so I had the rest for lunch. My oldest is at a Founder's Day festival in the community up the road where he goes to school. The youngest is up there, too, but at a sleepover, not at the festival. I am home alone and working. At some point, when I get hungry, I will eat a salad and popcorn. Or maybe just the popcorn. Lisa

I finally feel like a human being tonight, so I made shrimp scampi linguine -- I'm really proud of this dish. I used to get a thing at a local restaurant that called itself "scampi pennetta." That restaurant went out of business 8 or 9 years ago, and I missed scampi pennetta *terribly*. I finally put 2 and 2 together and realized, "Hey, that thing was just shrimp scampi on pasta with spinach and diced tomatoes thrown in. That's all. Just shrimp scampi. Surely I can find that recipe." So I scoured Food Network recipes and lo! And behold! There was an Ina Garten recipe and it called itself Linguine with Shrimp Scampi. I usually diverge from the Barefoot Contessa recipes on a bunch of points. She has a tendency to use ingredients that cost more than I make in a day. And she's always declaring that something is super simple after she has tempered in a dozen eggs, made a mornay sauce, simmered a homemade beef stock for three days, and grated up parmesan cheese so hard she needed a diamond drill bit to get it done. But this one is absolutely a winner. It's so good, even my son likes it -- and he hasn't ever liked shrimp before. (He eats scallops like a fiend and will suck the head of a crawfish without blinking an eye, but for whatever reason, he never liked shrimp. He says it's the texture.) So, anyway, to make a short story unnecessarily long, I made Ina's shrimp scampi with linguine, and because I'm still recovering from a virus with a fever that knocked me out for 4.5 days, I forgot to add the spinach, so it was not as healthy as I wish it were. It was absolutely delicious, though. I also made a tomato, cucumber, minced shallot, and bleu cheese salad with a drizzle of balsamic glaze that I got at Publix four weeks ago. I keep forgetting to use it. It's delicious. I don't know who invented balsamic vinegar or who invented balsamic glaze, but if I met them today, I would kiss them on the mouth. And then I would apologize, because germs. Totally full. No dessert needed. Do not pass Go, do not collect $200, go directly to scale and start moaning.

We make our burgers like this (and they are so juicy delicious !: 1 lb of ground lamb 3 lbs of ground chuck 2 heaping TBS of the Greek seasoning 1 tsp sea salt 1 tsp freshly ground coarse black pepper 3/4 cup of Feta crumbled (it comes this way, not the wet type feta) I use my hands to gently mix everything together and form into patties (this makes 8 burgers) We grill all of them and reheat in waxed paper any leftovers ( and they are good reheated and chopped into a wrap with romaine, spinach, more feta and some of the tsaziki sauce!) To make our version of tsaziki : 1-1/2 cups sour cream 1/2 of a fresh lemon, juice and zest 1/2 of an English cucumber peeled and grated finely 1 tsp of garlic paste (paste is best because the fine texture mixes in better than chunky) 1/2 tsp coarse fresh black pepper Sea salt to taste Mix all together. Keep chilled. Use as a condiment on the burger, drizzle over roasted potatoes, use on a salad! I made potatoes--boiled Yukon gold potatoes until tender, cut them in half lengthwise, while hot, laid them on a sheet pan and drizzled with olive oil, Greek spices, salt pepper. I let them soak up all the stuff then we put them on the grill cut side down and grilled until crisp/brown. We found that the tsaziki sauce was so good drizzled on them after we plated our dinner!! I too love Greek food!

I made the fajita stuffed chicken I posted about the other day. I didn't have time to cook it in the pan so I just shoved it all in a baking dish and it turned out even better!
