I ended up drizzling with olive oil and adding a little salt and everyday spice mix. They were very sweet and good. .

Thank you flanz , it looks great. I'm definitely going to try that one. I think I'm going to try modifying it to be a casserole for a potluck that I'm attending on Tuesday. Thought I would roast and then mash organic sweet potatoes (not sure if I should leave skin or discard) and then put into buttered casserole dish. Then wondering if I should add goat cheese mixture, top with some of the chimichurri sauce and bake, then top with more of the sauce and freshly sauteed broccoli when I take it out of the oven. Do you think that would work? Oh, my friend subbed arugula (rocket) for the watercress and used extra lemon and garlic.

Am I the only one who cooks it in the skin in the microwave? 6-8 minutes depending on the size. Skin comes off pretty easy after that, then I mash the potato up with butter and sometimes cinnamon. Since I've been on a soft diet for a couple of weeks now, I've had more than my fair share of sweet potatoes.

Baked sweet potato fries 2 servings 1 LG sweet potato 2Tbs olive oil Sprinkle with French fry seasoning Bake on cookie sheet in preheated oven 350° 20 minutes (turn after 10 min.) I tried this the other day, but all the recipes I saw had 400 degrees. They were almost done, then a few minutes later they were burned black. What I could taste was really good, but I need to cook at 350 instead. Do yours turn out crispy at 350, @elaynef?

No. I burned some too before I tried 350. They cook more quickly than Irish potatoes

I made mashed sweet potatoes the other day. I did a sugar detox about 6 weeks ago and do not eat anything at all with added sugar or with sugar substitutes. I do eat some fruit. Anyway, I prepped the sweet potatoes like I do potatoes for mashing and boiled in salted water until tender. Drained, added some butter and mashed. This was a SWEET dish. I can't imagine adding brown sugar or maple syrup or honey. A friend made a fab sweet potato dish the other day. She copied the recipe out of her cookbook for me and I can't find it right now. Whole scrubbed sweet potatoes were roasted and then split open. topped with a goat cheese/butter blend and then a homemade chimichurri sauce. She said it was delicious! Gotta go look for that recipe. Has anyone made anything similar? I'm going to a potluck on Tuesday and hope to make it, just turn it into a casserole by using a layer of mashed sweet potatoes as the base. Please please post this recipe if you find it!

But then I eat regular baked potatoes the same way and I know a lot of people don't. In fact I was really wondering why so many peel their potatoes before they roast them? I never do - just chop them and roast.
Maybe I'm just weird

sweet potato fries are one my favorite things. I get them if any place has them on their menu. Otherwise I like it like a regular baked potato with cinnamon, loads of butter, and sometimes the marshmellow browned on top.. YUM! I like the candied yams/ or sweet potato ,even though their a little different, at Thanksgiving.
I just discoverd you can give them too dogs too and they are really good for them. They love them! I just cooked a whole one and peeled it and diced it up. They loved it! It helps their bellies.
I don't care for the skin on any kind of potato.

We like them roasted. I cube them up with onions, peppers and any other veg that I have on hand. I coat them lightly with olive oil and season with herbs and kosher salt. Roast them at 425 for about 20 minutes. They're so good that we've started making big batches so that we have leftovers the next day. This is how I do them though usually at a lower temp for a longer time just sort of depends on what I need the oven temp at for other recipes.
