I love just baked ones. They need no butter or sugar. I eat it plain out of the shell.

We like them roasted. I cube them up with onions, peppers and any other veg that I have on hand. I coat them lightly with olive oil and season with herbs and kosher salt. Roast them at 425 for about 20 minutes. They're so good that we've started making big batches so that we have leftovers the next day.

First you whine about how hard it is to peel them until someone offers to do it for you. Then, when that's done, you say "While you're here, can you please cut it up into chunks for me?" This does not always work, so be warned that you may be doing these steps on your own. Cook in a pot of water until soft, drain off the water, then mash them like you would potatoes. Add a bit of butter and a 1/2 cup or so of brown sugar. I've never added cinnamon or nutmeg, but that sounds kind of good. Plop them all into a casserole dish. This can all be done ahead of time and then when you're getting close to being ready to serve dinner, put them in the oven at 300º uncovered for about 20 minutes to warm through. This is a dish we serve every Easter, Thanksgiving and Christmas.

Baked sweet potato fries 2 servings
1 LG sweet potato 2Tbs olive oil Sprinkle with French fry seasoning
Bake on cookie sheet in preheated oven 350° 20 minutes (turn after 10 min.)

I made mashed sweet potatoes the other day. I did a sugar detox about 6 weeks ago and do not eat anything at all with added sugar or with sugar substitutes. I do eat some fruit.
Anyway, I prepped the sweet potatoes like I do potatoes for mashing and boiled in salted water until tender. Drained, added some butter and mashed. This was a SWEET dish. I can't imagine adding brown sugar or maple syrup or honey.
A friend made a fab sweet potato dish the other day. She copied the recipe out of her cookbook for me and I can't find it right now. Whole scrubbed sweet potatoes were roasted and then split open. topped with a goat cheese/butter blend and then a homemade chimichurri sauce. She said it was delicious! Gotta go look for that recipe. Has anyone made anything similar? I'm going to a potluck on Tuesday and hope to make it, just turn it into a casserole by using a layer of mashed sweet potatoes as the base.

Am I the only one who has a hard time cutting raw sweet potatoes? I have a hard time cutting them into chunks because it's so hard to cut those babie up.

I used to make the copycat recipe on the Lone Star Steak House Baked Sweet Potato, but I haven't made it for ages. I got the recipe from the Top Secret Recipes site. It used to be a free recipe but now you have to buy it. I can't for the life of me find the copy of the recipe that I printed out. It wasn't difficult, pretty much just butter and cinnamon on top of a baked sweet potato cut in half lengthwise. When I was looking for the Lone Star recipe I found another one on the top Secret site that sounds good: Tony Roma's Maple Sweet Potatoes. Sounds quite nice. This is one that I have always wanted to try but haven't got around to yet: Florence Mama's Candied Yams. The recipe was shared on the old 2 Peas site, and people absolutely raved about it.

Peel and cube 2 sweet potatoes, peel and cube 3 fresh beets. Sprinkle with olive oil roast for 30 mins at 400 or until tender. Really good.

How could I forget...... this is one of my favorite recipes: Sweet Potato with Pecan Ginger Crumble
I love this dish, but I know that a lot of people don't like ginger so it's not for everyone. But to be honest you can't even taste the ginger.

We often have half and half mashed potatoes. I peel and cook the sweet potatoes with regular potatoes and mash them all together. Cuts down on sweetness. I also vote for Tyler Florence's Mom's sweet potatoes. Got rave reviews last time I made it.

I just did this tonight. Bought yams, baked them like a baked potato, slipped the skins right off and they needed absolutely no seasoning. We ALL loved them--even the dog!

We love sweet potatoes and have them often, sometimes sweet and sometimes savory. Sweet - roasted and then mashed with a little brown sugar, butter, and cinnamon Savory- roasted again, first cut into cubes or wedges or round like chips then drizzled with olive oil and seasoned with Penzey's chipotle or even just some seasoning salt. The wedges are great dipped into aioli.

I like to par boil them, slice into rounds, and then grill them. Off the grill toss them with a vinaigrette made from the juice of one lime, olive oil, and about a tablespoon of adobo sauce. It's different. One of my favorite summer side dishes.

Peel and cube them. Clean and halve brussel sprouts. Toss both in olive oil with salt, pepper, and dried thyme. Roast at 400 for about 30 minutes or until the sprouts get brown around the edges and potatoes are tender. The recipe I have calls for crumbled bacon and a sprinkle of fresh parmesan, but you don't need it. It is delicious.

Just recently my sister told me they serve baked sweet potatoes with chili served over them. I was skeptical but tried it. We've had them regularly since then with a dollop of sour cream on top. Don't knock it till you've tried it, lol! Delicious.
