Tonight I'm making oven baked fried chicken tenders, rice and peas. I actually have dinners planned this week. Woohoo.
What's on your menu?
Have a wonderful day everyone.

I've been trying for three freaking days to make pulled pork The first night we had steak instead ... Last night I made this awesome avocado chicken caprese recipe instead So today is definitely pulled pork ... it's in the crockpot right now and my house already smells yummy I'm thinking of making coleslaw with it but I don't want a mayo based one ... anyone have a recipe for an oil based slaw?

I grilled about 4 nights worth of dinners on Sunday so tonight will be barbequed pork chops with coleslaw and mashed potatoes.

A lighter version of chicken and broccoli alfredo. It's a big treat for us to have even a lighter version! I'm pretty excited.

Everyone away at a conference in London or meetings elsewhere until Thursday so on my own. Think I may just keep it simple and have cheese on toast followed by yogurt and fruit for dinner in about half an hour.

We're having a bit of a mishmash tonight... tilapia fixed some way, a medley of steamed cabbage, carrots, and onion (to rid the fridge of bits and pieces,) and steamed rice.

DH and I went to IKEA today, so we had a late lunch/early dinner at our favourite restaurant (and they have the best French cakes (Even better than the ones I have bought in France. I guess it was their loss that the guy who owns the restaurant moved here)).

I baked a chicken last night and have quite a bit leftover. I am going to put that to good use in a pot of white chicken chili. I will probably make some jalapeño cornbread to go with it.

Gammon steaks, pineapple, cheese risotto, asparagus and, for DH who thinks that's not enough, crinkle fries. Munchkin, aka DGD is sitting next to me in the high chair eating fish cakes. DH will find a dessert in the fridge and DGD will probably have jelly (jello?) I think I might have that too!

Late baseball game tonight so we're having the chicken, rice and veggie soup we should have had on Sunday night, but, that game went crazy late so I cheated and picked up burritos for dinner.

I'm going to make an asparagus quiche. I wish that I had some fresh fruit to go with it, and I'm undecided about a side.

Your meals all sound really delicious. I have no idea what I will fix. Translation: I need to go to the store. LOL. However, it seems like a good day for Taco Tues. to me. Last night, I bought a bag of tortellini, doctored up a can of spaghetti sauce and called it good. The kids were happy. Mission accomplished. Lisa

Shredded chicken tacos and lime rice. The best part is the half of a chicken just finished roasting, I grated the cheese, sliced the black olives and green onion, washed the lettuce, and sliced that thinly. So dinner is pretty much made.
Just have to warm up the black beans and taco shells, and make the rice. That takes 20 min to make.

DH says he wants garlic bread and spaghetti, but I want a lite veggie pizza on flatbread. I guess that means I'm cooking two meals. Oh well.

I found a package of good barbecued meat in the freezer - it's from May, but I wrapped it really tightly twice and it's not freezer burned. I'll serve that on sourdough buns with asparagus and a large salad full of vegetables I bought today. Berries for dessert. Thanks for the thread. I, too, leannec, would like a non-mayo coleslaw dressing, if you found one you all liked.
