I'm starting today w/a shot, literally. It's my monthly B12 shot and those suckers pack a punch. So, after I get my sticker and balloon(j/k) I'm going to run some errands and then come home to a cooking-free environment, because everyone is scattered tonight and it's a fend night.

I am fixing roasted chicken (half of a whole chicken) and am serving that with green beans and fried rice. Have some carrots that need to be used up.

We are doing dinner out with the family tonight. The younger boy cooked up a dinner out with my mom and I think they decided on Outback. Not my favorite place, but any night that someone else cooks, serves and cleans up my dinner will make it a okay in my book.

PW Chicken Mozzarella Pasta, broccoli and garlic bread. I plan a week at a time, but this week my menu is all messed up and it's making me crazy. I usually love cooking, but I am REALLY getting burned out lately!!

Yet another late baseball game [sigh]. Thanks to the freezer, we're having beef enchilada casserole and some sort of salad to go with it.
I almost re-thought dinner because this is the last of my freezer meals. I hate it when there's nothing I can grab and de-frost for those crazy busy nights. I usually have meatballs and enchilada casseroles in the freezer, but I'm open to any other suggestions you've tried. I'd like to come up with new options.

I am going to try to FINALLY make a buffalo chicken meatloaf tonight. I have been telling DH that I was going to make it for a week and it just hasn't worked out. So tonight, hopefully, will be meatloaf and baked potatoes.

Pasta carbonara.....because it given me an excuse to eat bacon. Dessert was fresh strawberries, raspberries and blueberries, with cream. Yummy!

Using leftovers from the refrigerator and things from the freezer and pantry, we're having a ham and potato casserole, roasted brussels sprouts and carrots, fresh strawberries, fresh baked wheat bread from my neighbor, and texas sheet cake for dessert. Yes, I am aware that the chefs on the show don't ever make casseroles. But, maybe they should. scrapmaven, you should really ask for the sticker and balloon if they don't offer them. When I have blood work done and I see a basket of lollipops, I ask for one before I leave. They look at me like I'm crazy, but they give me one.

I do feel somewhat better today, but between trying to get extra rest and my crazy work schedule, cooking has taken a back seat. We actually ended up going out for dinner with MIL last night ... left sickie dd#2 at home with Subway and she was happy as a clam So that means that tonight I'm making Greek salad with quinoa for dh and me ... Macaroni and tomatoes for the dd's because I'm a doormat and they are spoiled

Tonight is my fil's 80th birthday. We were all scheduled to go to a nice dinner out but he decided he would rather eat at home with some of his favorite foods. (I will have to admit I was a little disappointed that we were not going out!)
He requested my potato salad and bread pudding with whiskey cream sauce. I have no idea what else.

Don't know how you feel about 'cheating' but I one of our quick, late soccer night meals was frozen tortellini with alfredo sauce. I did make home made sauce most of the time-I make it so often that I can make it in the time it takes the water to boil and the tortellini to cook-but if you aren't above using the jarred sauce (which I am totally all for-when it is on sale buy one get one I always stock up) it is even faster. And while I know bagged salad is verboten around here, I would throw together a ceaser salad and call it a day. The whole thing takes around 15 minutes to make.

But, for anyone interested in that Spanish rice and chick pea recipe I tried last night, let me tell you, it was delicious! I was pleasantly surprised and even DH, who doesn't care for chick peas or artichokes, gave the ultimate compliment... "you can make this again." It was very flavorful and the ending touch of a squeeze of lemon really brightened the dish. Very good recipe!
