Yet another late baseball game [sigh]. Thanks to the freezer, we're having beef enchilada casserole and some sort of salad to go with it. I almost re-thought dinner because this is the last of my freezer meals. I hate it when there's nothing I can grab and de-frost for those crazy busy nights. I usually have meatballs and enchilada casseroles in the freezer, but I'm open to any other suggestions you've tried. I'd like to come up with new options. Maybe spend one or two days a month cooking freezer meals? Or double up certain recipes to pack away for needed freezer meals? I always have pasta and salad, loaded omlets with fruit, stuff to make sandwiches on hand for those quick meal nights. I will also double up for the next night. Not sure if thats the idea you were looking for.

Corn on the cob, broccoli and chicken. Lest you think that was too healthy, there will be chocolate chip cookie dough ice cream too. I'm still eating small portions, so my scoop of ice cream will be smallish.

We're going to see Kevin Smith tonight, so DH is picking up chicken salad croissants and green salads from a nearby grocery store, and we'll make a picnic in the park. And I can't wait. This is going to be such a good evening. (Even though Prince died, and I'm still -- it feels like someone snatched the sheets off the bed. Y'know?)
Caro, I dearly love Stouffer's lasagna. I made lasagna once. Stouffer's does it better than me.

I bought some whole wheat naan at Whole Foods and then this morning I made some homemade mini meatballs. Tonight I threw together naan meatball pizzas. They were a huge hit! I'm trying to come up with my menu for next week and I'm sucking wind. I don't have any days figured out yet. It's vacation week so I really just want to make every day a YOYO. LOL But I know that won't fly...soooo, I have to find something.

Using the instant pot to make a whole chicken-hope it turns out well! Also stuffing, salad, and lemon Parmesan green beans. Would you mind sharing how you make the parm green beans? They sound delightful! I used fresh green beans and they were super crunchy. If you don't want yours that crunchy I would boil them a minute or two longer than recommended. Lemon Parmesan Green Beans

My boys had a flag football this evening, so kept things really simple. Bread rolls with sliced ham, mayo, lettuce and tomato, with a side of chips. The boys had yogurt as well.

DH is bringing friends home tonight so I'm grilling lemon tarragon chicken, onions, zucchini and asparagus. There is lemon potatoes roasting and a Greek salad to round it out. Strawberries and whipped cream and/or brownies for dessert.
