I am hosting a brunch Saturday morning on behalf of our church for a woman who is moving away.
I have no idea how many people to expect.
So far I have had volunteers commit to an egg casserole, some fruit, homemade applesauce and one "I'll figure something out."
I'm in a time crunch with two other semi-major projects over the weekend. I need the additional dishes to be fairly low cost and low effort (I know....one or the other but not both!).
The ideas I've jotted down include bagels and cream cheese, cheddar bay biscuits, yogurt, roasted potatoes and muffins or coffee cake.
Any input? What am I missing? What about drinks? Is there some sort of formula that I can use? I thought a brunch would be easy but now I'm not so sure!

Yogurt and some sort of breakfast bread would be nice. I like the idea of a coffee cake. It's easy to make one and it's not something people have for breakfast very often. It's a special occasion breakfast thing.
For drinks, coffee, milk, juice, and/or tea (a small variety of tea bags and hot water would probably be fine.)

I think what you listed is more than sufficient for brunch. If there will be men there, they might want some kind of meat - bacon, sausage or maybe ham - but that will probably be covered in the egg casserole.
For drinks, coffee, tea and OJ would cover all the bases.
As far as a formula goes, I'm no help there. I've seen some catering formulas online for weddings and such, but I don't even know where you'd begin if you don't have a number for how many guests there will be.

I buy tater tots, let them defrost in the frig , crumble them up and fry them. But you could bake in the oven, about 400 degrees so they get crispy.
You can mix cheese in if you want.

Go to Sam's or Costco and get mini muffins, brownie bites some type of coffee cake - pound cake or doughnuts. Serve OJ, coffee and water.

I would conservatively count about half the congregation to show up. So plan for 20 above that.
A whole ham would be your best choice for meat. Have the deli slice it thin.

You have to at least be able to narrow down the number - is it between zero and twelve? 50-100? You are going to need more than one egg casserole, for sure.
I would have: Egg Casseroles (multiple) Oatmeal hot in a crock pot Fruit Bagels and Cream Cheese Donuts Hash browns or cheesy potatoes or both Ham - it's brunch, not just breakfast and you don't have anything that is non-breakfast Maybe a French toast casserole, although, again, you are going to need more than one. Beverages would be water, coffee, tea, iced tea (decaf in my world), juice, maybe some lemonade
