I have to go to Costco and that means Costco pizza tonight. I'll get a rotisserie chicken for tmw night's soup, as well. Unfortunately, that means I have to go to Costco.

No time for dinner tonight! Tae kwon do ends (downtown) at 6:45 and open house (up in the hills) starts at 7:00. We are doomed. I'm guessing it will be a PB&J before TKD and a bowl of cereal after open house. In other food news, we had a delicious Thai dinner with stepmom last night.

I decided on BBQ chicken last night. Was very good!
Not sure for tonight. I have some frozen hamburger meat and leftover hamburger buns. May do sloppy joes.

Smoked salmon, zucchini (and a hint of garlic), pasta....and cupcakes for dessert. It's DD's birthday (she celebrated with family on Sunday, and with her friends the week before, so today was very low key, but we still celebrated).

I am having the chicken from Sam's that I bought a couple of days ago. I was bugged because I thought I had a coupon to renew my membership when the coupon only applied to the $100 membership, which I actually had for an entire year and had no idea that I had. Not that it really makes any difference, except I guess they let you in the store from 7 a.m. to 10 a.m. when the "regular" members aren't in there. Like I would go to the store before 10 a.m. Not happening if I have anything to say about it. I am not sure what I will serve with the chicken, but I am glad that I don't have to figure out a main course. Lisa

Tonight is a Greek rockfish recipe with tomatoes and sautéed spinach served over rice or angel hair pasta. I love this recipe and my son isn't so fond of it but he is on a band trip to Williamsburg so it is on the menu!

I was really hoping for the early 4-6 baseball playoff time slot, sadly, that didn't happen and once again it's a 6-8 game - ugh! For the 2nd time this week dh, youngest ds and I will grab burritos and eat them at the game and oldest ds will munch his in the car on the way home.

We're having panko crusted salmon, cauliflower and green beans.
We went strawberry picking this morning and came home with 3 gallons, so dessert will be something strawberry-ish.

Tonight is our fast food night due to evening stuff, so no cooking for me.
I wanted to report on Chef John's Caramel Chicken, though. It was really delicious -- BUT. Two things. I forgot how much I HATE chicken thighs -- not the flavor of the meat, but trimming them because they are so fatty. The ones I bought were boneless and skinless and it still took me forever to trim most of the fat from 8 thighs. I would figure out how to use breasts next time, even though Chef John says don't use breast meat for this recipe. Second, mine did not turn out like Chef John's, which may be why he is a chef, and I am not. The mixture never really became syrupy, and the chicken never caramelized to a dark brown color. I did have the heat on high, and allowed even more time than he stated in the recipe. My chicken thighs seemed to release some liquid while cooking (Chef John's, naturally, did not), which ended up making the sauce too watery, even though I tried to spoon out the extra liquid. But -- I repeat, the dish was delicious. DH commented at least twice on how good it was, and frankly, he hardly EVER says anything about the stuff I cook.

If you go to the recipe (I can't link from where I am) on the allrecipes site, there is actually a 5 or 6 minute video of Chef John preparing the recipe. His sauce gets nice and syrupy, and his chicken caramelizes beautifully, no extra liquid at all. That's what frustrates me -- I do the same things, and mine turns out differently! But like you say, I'm the only one that saw the video, so no one else knows how it was supposed to come out!

After all out medical drama and CT scans for DH, the results showed fluid build. We are relieved because we were thinking the worst. Tonight we celebrate with a pizza. Even better, he is cleared to return to work. It's been 6 weeks since his surgery and we are both ready for him to get back to work.

@scrapbrat - cannot seem to link this no matter who many times I edit it.
We only eat boneless, skinless thighs here. Hate white meat. They must have a good butcher at Fresh Market in the next town because they are not fatty, so I get them when they are on sale. They are not watery. I am going to watch that video, too. We need new recipes for the thighs.
My pie was like that chicken. A disappointing thing because the lemon I used overpowered the fruit too much. Dh will eat it anyway because, well, vanilla ice cream is a bandaid on top hahaha.
Tonight is clean out the frig night. Not sure what will develop. Maybe a mess of stuff on top of rice. Always a hit.

Geez, the tacos I served last night went over like a lead balloon with dh ... apparently I should not make tacos anytime in the near future ... sigh! My picky family is turning me into a crazy person ... oh wait, I was already crazy so where does that put me Tonight I'm making Panko breaded pork cutlets and a big Greek salad ... there will be complaints from the dd's

I'm not sure yet. Something? The boy is home for dinner tonight and moaning about food so I will have to feed him. Probably chicken, I have some left over rotisserie chicken that really needs to be used or stuck in the freezer. Using it makes more sense. I am thinking chicken spaghetti-although I don't have any peppers. I could throw in some peas though.

After a trip to the dentist for our six-month cleaning and some resulting tenderness, I'm not so sure this is the best choice, but it's what was thawed... ham steak, homemade mac and cheese, lima beans, and maybe some grilled Vidalia onion slices.

Gosh, I haven't posted on the dinner threads in a while now. But I saw this one today and thought, "I *need* to tell them what we're having tonight." So since I think you reaaalllyyyy neeedddd to know... we're having Shrimp & Grits.
And reading through the thread made me think of several things to consider fixing for upcoming nights. I definitely *need* to come back to this thread every day.

We have a work thing from 4-6. Agent appreciation and awards for the top agents so DH will be among those recognized. He hates going to things like this but they serve wine and food. Depends on HOW MUCH food and whether I will be fixing dinner when we get home.

He has a pretty good dietary balance most days, but has been known to revert to his roots on occasion! When I go out of town leaving him at home alone, he will sneak in some fried Spam for dinner.
