We are meeting a couple tomorrow after church to go over building plans. They are our future next door neighbors and he is a building contractor, so we are getting estimates and going over ideas for our new home. I thought I would make them a nice lunch since they are coming over after their church lets out around lunchtime. I go to an earlier service so will have about an hour to prepare. They are both watching their weight and I want to prepare something light yet filling.
Any ideas? I appreciate it!

For lunch, what about grilled chicken Cesar salad or grilled teriyaki chicken with brown rice or slices of grilled sweet potatoes.

what about making your own deli sandwiches. A couple choices of bread, some deli meat and cheese, and condiments. Fresh fruit salad on the side.
