I have one huge plant, it really needs to be split. I cut a whole bunch of rhubarb and made a vegan strawberry/rhubarb crumble yesterday and again today. The boys ate it for dessert and breakfast. I used Earth Balance instead of butter because dd is vegan and it was delicious.
What else are you making? Any tried and true recipes?

I like it raw pulled out of the garden. We had a huge patch when I was a kid and we ate the stalks all summer. After many years I just planted a couple of plants about six months ago and I am back to eating it raw when I am in the garden. I have never made a pie with it but I am going to try a strawberry and rhubarb pie as soon as I get a chance, mainly for my husband as he thinks the raw stuff is nasty.

I've made a double batch of muffins and tried a new rhubarb custard pie recipe that was pretty good. My plant is massive--taller than me and about 6 feet across--so I try to keep ahead of it by pulling the new stalks before they get too woody!

My brother gave me a huge chunk of the root from his last year and it grew into this giant plant. I'm not a big fan of it but DH likes it. He said something about wanting some sauce and somebody having a recipe but I haven't seen it yet.

I don't have a rhubarb plant, but I love a rhubarb strawberry jelly. It's really fool proof, made with strawberry jello. The recipe has been a favorite of ours for years.

I like most all rhubarb stuff. One of the EASIEST and tasty is Rhubarb Dump Cake. No mixing. Just layer stuff and bake in a 13x19 pan at 350 for 45 min to an hour until golden brown. Layer 1: rhubard, cut up 5-6 cups (doesn't need to be exact- just a good cover of bottom) layer 2: one can crushed pineapple, with juice (a lot of people use sugar and add water, too. I prefer this as no added sugar and more flavor) layer 3: 1 3oz pkg jello sprinkled over, i use strawberry layer 4: Dry (right out of box) cake mix, I prefer yellow Layer 5: one stick or so melted better drizzled over top. Bake and that's it. Still warm is good with vanilla ice cream. It thickens more as cool/cold. Kids like to eat warm with ice cream (I think they just have no patience). I like it cold and firmer best.

Always strawberry rhubarb pie. My girlfriends mom makes a rhubarb punch syrup that she cans, then you add soda over ice. That sounds good to me, too!

I love it roasted in the oven (or poached) with just a bit of sugar and ginger. I add green ginger wine as the poaching liquid.

In Denmark we boil them with sugar (and sometimes strawberry or orhter red berries) and eat it with milk or creme and sugar - it is a very popular summerdessert - google translate call it a stew, but I am not sure this is the right term.

*sob* I miss rhubarb so much! It doesn't grow here, and when you occasionally see it in the grocery store, it's like$8/lb. My mom always had a ton of rhubarb in the summer. My favorite was rhubarb crisp, but strawberry/rhubarb pie was a close second.

I use this general recipe for all crumbles, it's modified from another one that I found online. For sweeter fruit like apples or peaches, I use 1/4 cup of white sugar, rhubarb is tart so I use 1/2 cup. Strawberry Rhubarb Crumble 10 cups of fruit (I use more, who doesn't like fruit ? I fill a 4L White Corningware dish about 60% full) 1/2 cup of white sugar 3 tablespoons of all-purpose flour (add a bit more for juicy fruits, a bit less for apples) 1 tsp ground cinnamon (I also add a sprinkle of cardamom for strawberry-rhubarb) 1/2 cup of water Topping 2 cups of large flake oats 1 cup all purpose flour 1 cup packed brown sugar 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup butter, melted ( I use Earth Balance vegan "butter" if my vegan dd is home) Directions 1. Preheat oven to 350 degrees 2. Place the fruit into baking dish and spread out evenly. Mix the white sugar, 3 tbls of flour , ground cinnamon (and any other extra spices you choose) together. Sprinkle over fruit in baking dish. Pour water over mixture 3. Combine the oats, 1 c flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the fruit mixture 4. Bake at 350 for about 45 minutes This is a really easy recipe. Great with vanilla ice cream! If you want to use less sugar, you can do that. Modify as needed. I substitute other fruits in season. The original recipe calls for 1 cup of quick oats but they disintegrated into the fruit juice and since I'm using extra fruit, I needed more topping. Large flakes are perfect. You can also make a smaller dish by using similar ratios in smaller amounts. This recipe is idiot proof Everyone eats the leftovers for breakfast  It makes about 10 generous portions.

I would kill for a good piece of rhubarb pie. Just rhubarb, no other fruits involved. I've never tried to make it myself, just relied on talented elderly friends, but I might have to give it a shot. It's hard to find rhubarb at the grocery store here, though, except for a tiny window. I may be too late.
