WOW! Never knew this about rice! OK, so we always (I mean ALWAYS) keep leftover rice on the counter overnight, and eat it the next day. My mom did this while I was growing up, and I do it now. We use short grain rice, so it doesn't get hard as long as we cover it. Have we been playing russian roulette all these decades???

How is that being on the safe side? Bacillus cereus is killed at temperatures above 212, frying temps are higher than that. And freezing helps prohibit bacterial growth.

Just rice? I would eat it. (Admittedly, I would eat almost anything, but this I wouldn't even hesitate to give to my kids). Eat it, you'll be fine. Really, I had no idea! I would not have eaten left out overnight rice, but I would have thought that was one of the "safer" foods to take a chance with. I love learning stuff like this on 2peas!

I have never heard that rice grows bacteria quickly but I would have tossed it too. Rice is cheap so I wouldn't have hesitated to throw it out.

I have a very high ick tolerance factor and I wouldn't eat that. Plus rice is like... a dollar for a big bag so bin it.
