Alas, I have another day w/o an idea. Yesterday I made chicken tortilla soup. I'm at a complete loss as to what to make today. Is "I don't know" an entree or an appetizer? What's on your menu? leannec, I'm concerned about your lack of appetite. How are you feeling today? marianne, how is your mouth pain? Have a wonderful Friday everyone. It's the start of a great weekend, just because I say so.

It's still hot here, so I made panfried mackerell with cucumber salad, and cold rhubarb soup for dessert. And after all that healthy stuff, I'm craving chocolate.....

Another hot one here too, rumors that it could get as high as 106 - ugh.
I took the day off work today, it's the first day of school summer break. Oldest ds had a friend sleepover last night. After an afternoon at our local pool we're heading to a pool party, of course, with a baseball practice thrown into the middle of things just for fun. The hosts are grilling tri-tip and hot dogs. I'm taking a platter of cookies. Last night I made chocolate orange biscotti, as I type this I have the first batch of cranberry orange pinwheel cookies in the oven, which will be followed by oatmeal chocolate cookies and ginger snaps. I'm happy I don't have to cook tonight, but ugh, why did I say I'd bake cookies. It's just 8am and already hotter than hell in the house and the oven is just making it worse. Grrrrrrrr.

We've got Tball tonight at 6:30 (only tonight and tomorrow morning left for him since we leave for vacation next Thursday) The season went by super fast and he has LOVED every second of it! He is a little bummed to miss his last two games, but how can you pass up going to a Giants game So with all that said... We're going to have Italian sausage spaghetti and green salad.

Tonight is one of our favorites-Alton Brown meatballs. They are made with spinach and rolled in bread crumbs before they are baked. Served on pasta with olive oil and Parmesan cheese (no sauce). They are so good! When my son was in 2nd grade he wanted me to bring those in for his bday for his class instead of cupcakes, lol.

i have changed the recipe-I use ground turkey and spicy sausage (I squeeze it out of its casing) as the base (not ground lamb, etc.) and use more spinach. I have been making this for many years so I never measure my bread crumbs or spices, I just throw things in. But this recipe base is what I started with. I had a friend and herson was a very picky eater. She called me to ask for the recipe because her son kept saying how much he loved them. She was shocked to know they had spinach in them as her son often refused any vegetables at all.

Pizza night here! I'm doing one spinach alfredo and one meat lover's with pepperoni, sausage and bacon. Wonder who will be eating the spinach one all by herself?

Lots of pizza for the RP's.
Me, too. I have leftover pizza from last night and I'll fry up a little bacon and throw that on top before reheating it in the oven. I made some super healthy cookies, too, after reading an article about a study showing maple syrup might ward off Alzheimer's. The cookies also have zucchini in them. I had to squeeze the water out of the zucchini, though.
Good Friday and weekend to all. Thanks for the thread.

I may have to try those meatballs, as I am always looking for new ways to use spinach in recipes. They sound great.
I just got back from Sam's and bought a huge piece of salmon, so I'll make that tonight with a spicy glaze. I bought a big piece because I want to try a new recipe with the leftovers, probably on Sunday. Anyway, roasted potatoes and fresh asparagus to go with the salmon tonight.

I've been in a cooking funk this week. I had leftover ziti last night, and have been wondering what to do tonight. I decided to try the maple Dijon thighs again. That's easy, and I don't feel like cooking, so winner, winner, chicken dinner! I have some leftover broccoli and will make the orzo carrot salad.
ETA - thanks for all of the cooking inspiration, Refupeas! I hope everyone has a good weekend!

Well I had a not so happy dh handled dinner last night, so I took spaghetti sauce out of the freezer for tonight Just in case anyone wonders - I had a dog training class last night so I asked dh to make dinner so I could just eat when I got home. He decided to buy teriyaki. But then I get a call at work that they forgot to put my meal in the bag. Could I stop on the way home and pick it up it was already paid for <sigh> Not only did I not have dinner waiting for me at home, I had to stop and pick it up and it was apparently not already paid for Yes, someone was really grumpy when they got home and had to rush to class

It was grocery day for me today. Went to Aldi and stocked up on fruit; strawberries, blueberries raspberries and all kinds of veggies. I still feel guilty for eating my nitrate laden/high calorie/fell on my clean floor/pizza the other night. I will probably make a giant fruit salad and have oven roasted veggies now that the door has been reattached to my oven.

Another day, another lunch with a friend. We split a platter of homemade hummus and then I ordered the spinach salad. I'd eaten so much hummus, I could only eat a small portion of the salad. IF I feel like eating this evening, I'll finish off the salad. I'll try to talk DH into leftovers. He's usually a good sport about fending for himself.

Third time's the charm, right? Either I make that chicken soup tonight (even though it's going to be 97 degrees by then) or the chicken stock goes in the freezer. A salad with chicken is sounding better and better.

Maybe alfredo? It's quick and easy and the boy likes it. But I have an almost full container of roasted garlic hummus that says to me: 'find a way to cook with me, you know you want to...' so if there are any good ideas on the thread I posted, I may be willing to change my mind.

I'm very tempted to be 'on strike' for dinner but I doubt that will work.
No idea what I'm making though. I wanted to do bratwurst but it's raining so no grill.
So I'm a bit stumped. Maybe frozen Meatballs pasta & salad.
Or maybe I will make myself a sandwich and hide see what happens

Maybe frozen Meatballs pasta & salad. Or maybe I will make myself a sandwich and hide see what happens I cooked. Just the pasta nothing strenuous I just feel so stressed having to feed them everyday. And I like to cook, or at least I used to. It's the planning and deciding and the prepping. All the 'stuff' that 'magically' happens for them. It was fine when I wasn't working, but it just seems soooooooooo tiresome now. And they all, especially DH acts like its no big deal, doesn't take time or effort. Granted boiling water and throwing meatballs in a pot with sauce is as minimal an effort as it gets. BUT someone ( magical dinner fairy I guess ) had to plan/prepare/shop to have the items here to even have that option. THATS what they don't get. To feed them I have to be thinking 7 steps ahead. And if they would just not take that for granted I'd be happy! Ah well, there's my whine for the day. Maybe I should have a glass of wine to go with my whine.
