I also pick 2 lunches for me and prep them. This week MWF is egg salad on a sandwich thin with baby spinach. TT is spinach salad with black beans, lobster classics & parm cheese. Snacks are plain greek yogurt (portioned into containers) that I'll add a spoon of honey to, carrots and hummus, mini bell peppers and apples or nectarines.
I make jello for the kids/husband. I prep their snacks. My youngest loves lunchables, so I make my own with sharp cheese, better lunchmeat and crackers. I've got tiny cookie cutters that I use to cut the lunchmeat. DH gets tuna salad a few days, so I make that. I also did muffins for the kids for breakfast.
