My dh and I have decided we need to start eating healthier again. I am hoping this will make me feel better as well. I have seen on pinterest where some people do meal preps. I figured this would be a great idea to just grab and eat, especially on days I work late. Has anyone here done this? If I cook things one day a week and put them in containers, will they last and not go bad? What do you do to prep healthy meals ahead of time. TIA for your help.

I do meal prep every Sunday. I do 5 lunches for dh and at least a couple of lunches for me. I cut up LOTS of veggies so it's grab and go - carrot sticks, broccoli, cauliflower mostly. I do no less than a dozen egg patties with either bacon or ham each week (dh and ds eat them every morning for breakfast on a bagel thin or Flatout Foldable). I also steam a dozen eggs each week and peel them so I have hard boiled eggs for snacks. What I typically do for lunches is choose 2 different lunches - grilled chicken and 2 veggies for 3 days of the week and either pork chops, turkey, steak plus 2 different veggies and rice for the other 2 days. And I always have salad available so that I can have a salad at any point during the week. Good luck!! Once you find a good routine, it's fairly easy to keep it up!

I'm lazy - the easiest way for me to eat healthy is to only BUY healthy...because let's be honest...if there's a bagel and cream cheese (or a chocolate bar), I'm going to grab that before the yoghurt I don't do much pre-prepping but I'm all about buying convenience. I just went shopping tonight. For breakfast? I bought a bag of granola, a bag of frozen mixed berries, a big tub of greek yoghurt (easy enough to make up individual servings in advance); I also bought individual yoghurts for my kids and(we already have instant oatmeal). Oh and eggs - other than the hardboiled - I don't pre-prep eggs, they are quick anyway. For lunch? I bought preprepped veggies (baby carrots, peapods, broccoli, grape tomatoes), fruit (apple slices, grapes, strawberries), cheese (babybel, laughing cow wedges, blocks of cheese that I pre-cut into cubes, sliced Swiss cheese, strong cheese), lunch meat...I forgot to grab hummus. There's already a loaf of sliced bakery italian (I always buy sliced because the bakery cuts it into more slices than we ever manage to and the smaller slices are better portion control than sandwich bread for instance) and there are crackers as well. I'll try and remember to hardboil some eggs as well. Snacks - cheese, fruit, airpopped popcorn, raw veggies, hardboiled egg, yoghurt...all those are options Dinners - I use bagged salads (I like the chopped salads) and I often buy frozen vegetables - this week I picked up zucchini and squash fresh as well as bell peppers for a homemade pizza. Weeknight meals are usually 30 minutes start to finish, weekend meals are when I put more time into cooking. This coming week's dinner menu: Sat - homemade pizza (one pepperoni for kids, one with mushrooms, peppers, tomatoes and onions for adults) with salad and golden honeydew melon Sun - DD(16) is cooking - pork roast, roast potatoes (if I were cooking it would be roast root veggies but....), carrots and broccoli and some kind of fruit Mon - leftover pork roast and sides Tues - bbq pulled chicken (crockpot) with coleslaw and applesauce and I'll put out an assortment of raw veggies as well Wed - DD(9) is cooking - soft tacos (beef/beans, lettuce, tomatoes, onions, cheese), leftover coleslaw and some kind of fruit Thurs - chicken enchiladas with leftover veggies from Wed and raw veggies and fruit Fri - cheese quiche, salad and fruit I shopped the perimeter of the grocery section - the only 'grocery' aisle I went down was baking (for spray oil) and International (for refried beans)...oh and soda for my diet, caffeine-free dr pepper because one has to have A vice, lol (I buy the cans for portion control - one/day max). Everything else came from the dairy, meat, produce, bakery depts. That's partly because I already had frozen veggies, tinned fruit, and oatmeal on hand though. But I try really hard to avoid all the temptations on the centre aisles because if I bring them home, we eat them.

It's just me, so I cook on the weekends and pack up the leftovers for lunch. When I leave for work, I grab a container and put it in my lunch bag. I like to make soup to have on hand for a quick dinner. I'll make quinoa salads when it's hot. If I'm really motivated, I'll make hummus and cut up peppers and carrots for snacks. I do meal prep but it isn't as grab and go as some people do it. Things I commonly do to meal prep:
--on Sundays we grill lots of chicken, salmon and turkey burgers for the week. I then use it for lunches with salad or veggies.
--egg "muffins"'and/or hard boiled eggs
--I have some divided containers that I fill with raw veggies and either hummus or Greek yogurt ranch dip. I do make several so I can grab them each day
--sometimes I will make homemade turkey/veggie meatballs and then freeze some. I need to do this again.

I need to do this more. I'm gone a lot for dinner now and have loved having even sliced cooked chicken and carrots that I can just grab and eat when I'm about ready to pass out.
I want to use the crock pot more because the family eats out way too often. It's expensive and not healthy.

This is almost word for word what I do!! Last Sunday I made 8 lunches. I had 2 sheets of different roasted veggies, black beans, a bowl of cooked quinoa and a bowl of cooked brown rice. I just grab a spoon of this and that. So some end up with cauliflower and carrots, quinoa and black beans. Then others end up with roasted tomatoes, mushrooms, black beans, rice with a dallup of hummus. They are all similar with a bit of variety. I left them all in the fridge for days when there are no leftovers. Eggs, cut up veggies, little tubs of cottage cheese. My kids won't eat cottage cheese if it's still in the tub. But if I divide it up into little tubs they will grab it and eat it. Weird! Breakfast and lunch are pretty much grab and go around here. With several hours worth of work on Sunday's.

I scramble 2 eggs, add a little crumbled bacon and cook it. I wait for them to cool completely and then put my ds's in a tupperware container and dh's I put in individual ziplocks and he just grabs one in the morning and throws it in his lunch box. He heats it up once he gets to work.

I roasted some vegetables and baked some boneless skinless chicken thighs earlier today. Just finished seperating them and was able to make 5 meals. Chicken thigh with broccoli, aspargus and 3 mushrooms. I'm thinking I can either have one of those meals or a salad for my meals. Now trying to think of what to do for breakfast. My next day off I'll make something different for another 5 days. Thanks for sharing all your ideas !

I love salads for lunch so we prep those in the weekends ahead of time. I store them in These 4-cup glass Pyrex bowls with lids. A small paper towel goes in first, then loads of veggies some nuts, then 1 cup each of spinach and green leafy lettuce and finally half a baked chicken breast. They stay fresh and I take out the paper towel (easy) and pour in the dressing and shake shake shake. The salad is coated and I use much less dressing this way. Delicious! We also wash all of our fruits and veggies, and cut some so they are ready to grab. Even if you don't have time to make a lot of food on the weekend, you can make a habit of doubling recipes as you make dinner and freezing the second serving to have for another time.

I typically meal prep on the same day I shop--sometimes Saturday, sometimes Sunday.
Some things I'll prep ahead: *some kind of meat-based protein--chicken breasts, deconstructed burgers, grilled steak with a simple rub, etc. *a healthy carb--sweet potato, rice, or sometimes regular white potatoes--I use my InstantPot for these *hard boiled eggs (InstantPot again!) *salad fixings (I want to try the mason jar style to prep them for the week) *fresh fruits/veggies
I pack my lunches the night before so the next morning I just need to grab and go. Ziploc used to sell these lunch containers with different compartments--I have about 6 that I use, and DD's old kid-sized silverware fits in them perfectly. (I eat salad with a princess fork. Don't judge)
I can knock out an entire week's worth of cooking (for just 2 of us) in about 2 hours.
I'll divide up larger recipes and freeze half, so when life gets hectic (like when you're a teacher trying to survive the last weeks of school!) I can pull something from the freezer and cut my prep to just the fresh things.
It really is worth it!

I shop once a week usually - I find the leafy salad blends make it at least to mid-week - sometimes the full week but I don't usually chance it, the chopped salads seem to last better - all week for sure (and the bag we forgot about, went out of town and came back was still good nearly two weeks after purchase (unopened). I shop on Friday nights usually serve the leafy salads by Tuesday and chopped the rest of the week and into the weekend how many salads depends on serving size mostly - the romaine blend usually serves my family of 4 for dinner (as a main dish with lots of toppings) or dinner for 4 as a side plus leftovers for 1-2 for lunch the next day or dinner the next night. The chopped salad - I'm usually the only one eating it and it's a side dish...I would say 4 servings?

There is a wonderful young man on YouTube who has a channel called Fit Men Cook ( or maybe Man). He has some great videos where he shows planning, shopping, cooking, and portioning healthy meals for a week on a budget. His recipes look good and pretty simple. He would be a great inspiration, I think, for anyone trying to get on the healthy eating wagon.

I'm glad to see so many people meal prep! Hopefully we can share ideas. I usually do some form of meal prepping on Sundays. This week, I was a bit lazy so I made a bit pot of turkey chili, a fruit salad and hard boiled a dozen eggs. I always have salad fixings. I will have a few days of chili for lunch and a couple of salads. I usually buy lunch on Wednesdays as we have a farm that delivers healthy salads to our office. Best idea ever (I sometimes stalk their website for ideas for salads to make at home! 9 Miles East) Most times I don't prep actual meals, but the ingredients that I can use to put something together. I do try to cut up veggies and have either ranch or hummus so that ds and I both have some easy and healthy to grab for a snack.

I do a couple of things on the weekend. Every Sunday, I buy a large container of cottage cheese, a big (quart size) container of Chobani vanilla Greek yogurt, and a fresh berry bowl made in-house by my grocery store. The berry bowl is a mix of 5 kinds of berries, and they are already cleaned and cut up, so ready to go. I make 5 containers of yogurt with berries on top, and then I add 1/4 cup of granola to each right before eating. These are either breakfasts or sometimes a weekend lunch or whatever. I also make up 4 or 5 containers with a large scoop of cottage cheese (3/4 cup), and then all types of fresh chopped veggies on top. These are my go-to lunches during the week, but occasionally I'll take leftovers or go out to lunch with co-workers. I put everything into Lock 'n' Lock containers, because these keep the fruits and veggies super fresh through the week.
The only other "meal prep" that I might do on the weekend is make up a big bowl of salad, which I then transfer to a large Ziploc bag. If I'm careful to squeeze out the air each time, the bag of salad will easily stay fresh for days and we can get several nights of side salads out of it. The salad mix only includes "drier" toppings like shredded carrots, chopped bell pepper, etc. No tomatoes or overly "wet" things.

I keep veg soup in the fridge for a quick snack to keep me from grabbing something bad. I got the recipe from WW and it has no high carb vegies. I noticed I never get a cold when I eat it every day, too.
WW Vegie Soup
LG can tomatoes Onion Green beans Carrots Spinach 2 Boulion cubes
You can put anything you like in it. ( No potatoes.) You can put some beans, but they will add carbs. I make it in the crock pot and it lasts for 3 or 4 days. I freeze half of it. You can use canned, fresh or frozen vegies.

I will put one container in the freezer in case something happens during the week and I go out to lunch and that way whenever I get around to eating that frozen meal it is still fresh. When I cook my carbs I measure it dry, then divide it equally between the containers so I know I'm only eating one serving. I also make green smoothies and put 3 servings in the fridge that are still fresh the following days. Everyday I bring a green smoothie and 2 TB hummus with carrots to work as my morning and afternoon snacks.

LOL My little skillet all I have to do is wipe it clean. MUCH worth the extra time than using the whoopie pie pan!
