We're making dinner for a friend recently home from the hospital. Her teenaged dd doesn't eat meat so we're going with macaroni and cheese with a nice salad of some kind. I'm not a big mac and cheese person so I don't have a tried and true recipe. I'm hoping some of you have some great recipes.
Can you help me out?

This is my favorite...sometimes I substitute sourdough bread for the white bread and add a little garlic to the melted butter for the bread crumbs. Martha Stewart's Mac & Cheese

My go-to mac & cheese is Pioneer Woman: Pioneer Woman mac & cheeseI always do the bread crumb/butter crust on top, and bake it until bubbly, although extra cheese on top is good too. Best one I've ever made!

how about..cook the macaroni.. slightly underdone. make a white sauce (1-2 cups) add 1-2 cups tillamook grated cheddar. pour over cooked macaroni and bake for 30 min at 400. done.

Grate around 300g fontina. Cook 500g of pasta (fusilli is what I normally use) until al dente. In a pan - melt two tbsp butter, mix in two tbsp flour, add two cups of milk and simmer until a bit thickened. Add around 2/3 of the fontina until mixed and melted. Put pasta in a casserole dish, pour the cheese sauce over and mix, cover with remaining grated cheese and dust with bread crumbs (I like sour dough or Italian). Bake at 350F until the cheese is bubbly and starts to brown.

I'm getting ready to make this one John Legends Mac & Cheese I hope this link works! I've only made it once before, for a luncheon for a classmate of my son when she returned to school after an illness. She is having a grad party this coming weekend, and I just learned she requested he bring it.
