Tacos... DH & the girls are at ball practice, so I thought tacos would be quick and easy and something I could have ready when they walk in the door.
I might make a pan of brownies too... Because chocolate.

I have been eating for dinner one of my prep meals. I had baked chicken with aspargus and roasted broccoli.

It was Taco Tuesday here. Beef taco meat with hard or soft shells, lettuce, cheese, sour cream, tomatoes, green onions, salsa and a perfectly ripe avocado. Oh my goodness that avocado was SO good.

I spent yesterday at the hospital with my parents..my dad had surgery (he's ok) and my mom just really needed the support of someone there. It ended up being a late night so I didn't really have dinner.
I finally made the Mexican chowder I was planning on making and I had that for dinner. It made quite a lot so I'm sending some to DS' daycare in the morning.

It rained for a good portion of the day and finally the sun came out around 2 or so. I guess my friend Tropical Storm Colin has moved on to greener pastures. The result though was a fairly hot and humid afternoon. I am now officially starting to get myself in the mind frame of having an official empty nest. The boy hasn't actually left yet, but he is riding the party because I graduated wave and I suspect I won't see him much for a week or so. He came by briefly this afternoon to pick up some clothes, then out with his friends and to spend the night at his dad's. Tomorrow is Disney.
To that end, I went with the comfort food of black beans and yellow rice. I have *just* enough for lunch tomorrow.

I had some tortellini that needed to be used so tossed it with a little Italian chicken sausage (that also needed to be used), spinach and pesto sauce with a Caesar salad and fresh pineapple (that also needed to be used).

Yet another update (I must be bored): I found a TJ's Tarte d'Alsace (don't be fooled, it's a French pizza) in the freezer so I'm eating that instead of ordering in. Saved myself $25. ha ha To be followed by ice cream if Hillary wins California. Or maybe even if she doesn't.
