The dd's will complain (big surprise) but dh and I will finish up the Pioneer Woman Chicken Tortilla Soup that I made last night ... it's so yummy I'll probably cook up some perogies for the complainers

um ... ground beef?? ha ha I had the 7yo last night and he wanted chicken noodle soup. And as his dad grouses, "What the little prince wants, the little prince gets." Yup! That's right!

Eggplant parmesan that I made at the weekend in preparation for the nightly swim and water polo classes. Of course, it turns out I screwed things up and water polo is only 3 nights a week and tonight's not one of them, had I have figure that out earlier then we'd have had the eggplant last night. Oh well, the good news dinner is pretty much done, all I need to do is re-heat and cook up pasta for the men of the house.

DH requested bacon and kale quiche, so that's what I'm making. Sometimes I fix a side dish to go with it, sometimes I don't. We'll see if I feel like it when it's closer to dinner time.
Watermelon slushies for dessert.

Dh told me about the concoction he's calling dinner this morning. It involves ground beef and stewed tomatoes. As much as I love tomatoes and tomato sauce I really don't like stewed tomatoes at all. I may end up with eggs and potatoes.

We're having egg roll stir fry, rice, and I have no idea what else. How do you make your eggroll stir fry? Is there a sauce with the recipe? Years ago I got a recipe from someone in old two peas and the family lived it but our grocery had a bottled sauce we used. Long story short store no longer carries sauce and I list the recipe and I only remember the stir fry ingredients & not the sauce since I didn't make the sauce. Lol

The butcher convinced me to try beef ribs. The price was right, and I love BBQ pork ribs, so I bought a Trumpian package. (It was HUUUUUGE!) BF smoked them, then finished on the BBQ Sunday. So disappointing, there is barely any meat on those ribs. At any rate, we will gnaw at the left overs tonight, along with green salad and spuds.

I'm getting into summer mode. Much more relaxed and in a better mood regarding making dinner. Cheese enchiladas and rice for DH and something lighter for me, maybe scrambled eggs with veggies. The heat is breaking here thanks to thunder storms and I feel a bit cooler and a bit hungry.

Well I make something less 'authentic' and they like it 1lb ground meat ( usually chicken ) original recipe called for breakfast sausage from a tube 1 bag Cole slaw mix with shredded carrot Bottle of Sauce ( original recipe had a sauce recipe ) So their expectations aren't all that high lol

I pulled out some frozen chicken breasts. I was going to just cut them up and cook them in wing sauce. And probably just serve with potatoes and maybe corn. But the kids are at the mall with their dad. They might eat there. At this very moment, I am eating a huge kale salad for a late lunch. True confession coming - please don't judge.... I was thinking of going to the movie theater just to buy a huge bag of popcorn since it's only $2 today. I don't want to see a movie today; I just want the popcorn. And making it at home is *not the same. I want movie theater popcorn. With butter layered throughout. Whew, now that I have that off my chest, I feel much, much better. Lisa

I had a big lunch out and can't imagine eating again tonight but will grill chicken thighs along with the usual vegetables (eggplant, peppers, onion, asparagus an zucchini) for the family. I'm also going to grill some chicken breasts to make chicken salad for tomorrow.
