Tonight I'm making chicken soup w/the Costco chicken that I bought a couple days ago. That rotisserie chicken gives the soup a really good flavor, according to dh.

I have a lovely head of cauliflower that I will roast and some green beans that need cooking. I may just have those along with leftover green pea risotto.
I must give props to the ladies on this thread. I never used to use my chicken carcass for broth. I started doing so thanks to those of you who always make stock. Thanks for the inspiration!

mellowyellow, stuffed peppers sound really good. I think I may have to put that on my menu next week. Not sure tonight, hopefully I can continue on this week of NOT cooking. My streak is doing good!

Dd home from grad school for Father's Day this weekend. Her favorite meal is tonight: grilled chicken thighs, broccoli, potatoes cooked in butter. And I splurged on fancy desserts at Fresh Market - eclair for Dh, brownie for Dd, and tiramisu for me. Thanks for the thread. You gave us a bit of a scare yesterday, scrapmaven .

I made this the other day and omg....so delicious! The sauce would be good on just about anything I think!
Bangin’ Grilled Shrimp Skewers Skinnytaste.com Servings: 4 • Serving Size: 2 skewers • Points +: 3 pts • Smart Points: 3 Calories: 140 • Fat: 4.7 g • Protein: 18.5 g • Carb: 4.2 g • Fiber: 0.1 g • Sugar: 2.8 Sodium: 266.9 mg Ingredients: • 2 1/2 tbsp light mayonnaise • 2 tbsp scallions, chopped fine • 1 1/2 tbsp Thai Sweet Chili Sauce • 1/2 tsp Sriracha (or to taste) For the Shrimp: • 40 large (12.8 oz) raw shrimp, shelled and deveined (weight after peeled) • fresh cracked pepper • oil spray
Directions:
Combine the mayo, scallions, sweet chili sauce and sriracha sauce in a small bowl. Set aside.
Soak wooden skewers in water at least 20 minutes (or use metal ones to avoid this step). Season shrimp lightly pepper. Place 5 shrimp on 8 skewers.
Heat a clean, lightly oiled grill to medium heat, when the grill is hot add the shrimp, careful not to burn the skewers. Grill on both sides for about 6 – 8 minutes total cooking time or until the shrimp is opaque and cooked through.
Set shrimp aside on a platter and quickly brush sauce onto the shrimp; serve immediately.

The sauce is almost the same as the dressing I make when we have fish tacos, except I also add apple cider vinegar and a splash of agave.
Last night I was a baking fool. 3 different types of muffins, a French yogurt cake and enough pancakes to (hopefully) last the kids 3 weeks. tonight will be an easy one. Meatballs from the freezer with pasta and sautéed kale.

I'm hosting Book Club tonight so I'll be eating assorted appetizers for dinner My contribution is: - shrimp ring - chicken and cheese taquitos with picante sauce - chocolate chip cookies - wine ... even though I can't drink it Dh and dd's will have to either graze on the Book Club food or fend for themselves

Leftover salmon.....sooooo, I have eaten fish four times this week! And when DD10 is asleep, I will eat chocolate, drink hot tea and read a book...unless I fall asleep on the couch.

Brisket, mashed potatoes and corn. Sounds good huh? Well, all the glory must go to Whole Foods. I had lunch with a friend and we were right next to a Whole Foods, so I went in and got dinner from the deli. I'll finish off the delicious fish tacos I had at lunch. So happy it's Friday night.

We're cooking out with friends. DH is grilling burgers and hot dogs. I've made my homemade hot dog sauce from my mom's family recipe. DD made the berry trifle she loves so much. Friends are bringing cole slaw, mac and cheese, green beans and a few different desserts. DH and his buddies are making what they call Double Bypass Burgers. It's a burger between two grilled cheese sandwiches. I think they might be adding blue cheese to the beef mixture before they grill them, too. Using the Youtube video that @iowa57girl posted a couple of weeks ago, I wove some bacon together to go on their burgers. It was really easy, so thanks, iowa57girl! They got this brilliant idea from a restaurant they went to in Atlanta called The Vortex. Only the restaurant uses something like 10 slices of cheese, 9 slices of bacon plus a fried egg. I drew the line at 3 slices of bacon, 2 slices of cheese and no egg. None of them have problems with their cholesterol, but they might after this.

While I haven't been participating the last few days, I have been reading and enjoying the dinner thread. Thank you to all of you that post! Due to a dying refrigerator, cooking is going to be quite a challenge for several days. I was able to save some of the things from the freezer, but had to throw out tons. There's very little left in the fridge because the temp never gets below 40-degrees. I prefer to choose my challenges, but....life comes at you fast sometimes. <shrug> I will try not to complain each post about this situation, as my family is doing enough of that, and I know just how annoying it is. This is so inconvenient for them, ya know? All that to say...we will be having tacos, tortilla chips, and salsa. I might cook a package of Mexican rice, but probably not. ETA: I'm heading to @nicksmom's! My family is on their own!

Been busy in the kitchen today making tomato jam and chicken stock, so dinner is quickie tacos & refried beans from the freezer, leftover romaine from our cobb salad, and a chopped tomato I didn't use in the jam! How's that for using up leftovers? lol

Glad you liked the video and found that weaving bacon is easy @nicksmom It perfect for BLTs. Tonight is my DH's bi-monthly night out with a group of his fellow nerd/geek buddies to drink boots of beer and eat meat laden pizza. So, since I'm on my own, I'm going to make myself a nice big salad with lots of veggies AND because I can't be too healthy, I'm going to make the Pioneer Woman's Olive Cheese Bread to go with my salad.

We took the 7yo to Children's Fairyland in Oakland this morning and then went to Fentons, our favorite ice cream place, for lunch ... so right now I'm eating leftover stale potato chips (a Fentons tradition, ha ha) and thinking I don't need dinner. But the 7yo will need feeding! I think there's fried shrimp in the freezer and there's definitely a Costco chicken in the fridge, so I can put together something, and I'm sure I'll be able to force myself to eat again in a couple of hours.
