Dinner will either be leftovers or chicken, peas, scallions and rice. It depends upon some appointments that might have come up. So, it's a big mystery and I'll know when I get there.

The start of a week of crazy hot weather; therefore it's a quick easy dinner that won't heat up the kitchen. Tilapia tacos which will probably be finished off with an ice cold cocktail.

We ended up having grilled dogs with chili and "stuff" and roasted red potatoes last night (dh's request). So, tonight will be what I said we were having last night: something (Italian beef, buffalo chicken, etc.) in a bun. I made cucumber-tomato salad and have grapes and blueberries to round out that fabulous dinner.

I asked dh what he wanted for dinner ... He said "Whatever the kids want." Well, the kids are at school so how do I know that? I decided to go with a dish that dd#1 likes: Oven Glazed Chicken It's one of only two recipes I make with canned soup I'll serve it with egg noodles and a salad of some sort ETA: We still have a bunch of DQ Father's Day ice cream cake to eat for dessert too!

Costco pizza! Yay for Costco. Dd is laid up on the couch after knee surgery so a few friends are coming over to watch "The Bachelorette" with her. She requested pizza so dh gets to eat that too because I'm not cooking something else when there's perfectly good pizza laying around.

By request, spaghetti with meat sauce and garlic bread. That's for DH; I'll probably stick to a bowl of cereal. I've really lost my appetite over the last couple weeks. Nothing appeals to me right now. Believe me, that's out of character for me.

I spent the weekend prepping and cooking a huge meal for Fathers Day. Luckily we have leftovers! Tonight it's going to be... Smoked Pork with bbq on a bun Macaroni Salad Baked Beans Deviled eggs I have a little leftover homemade vanilla ice cream and root beer. I see a float in my future!

DD is having a bunch of friends over to cool off in the pool later and they plan to order pizza. I might tag onto their order or make a giant salad and let DH & DS fend for themselves. I will not cook or grill when temps approach 100F. Given that it is only 10 AM and we are already at 97F (36C), I expect to hit that mark today.
ETA for dessert last night I tossed fresh strawberries and mint with a little Balsamic glaze - it was so good I'm just made another bowl for tonight.

Leftovers! I still have half a pan of chicken spaghetti as well as leftover grilled pork chops and mashed potatoes. I'm not sure we won't be having leftovers on Tuesday, too!

We were on vacation last week and ate way to much, so this week will be lean menus. Tonight is grilled chicken breasts with Jamacian Jerk marinade; corn on cob; and canteloupe. I realize that there are plenty of carbs in the fruit and corn, but still trying to cut back on carbs.

I'm making chicken and potato foil packets. It's a recipe that DH wants to try for his next camping trip. I told him he needed to go build a fire and cook the chicken over it so he would know for sure if it will work. He said it's too hot to build a fire. I asked if he thought it would be cooler in July when he's planning this trip. He rolled his eyes.

WalMart had rotisserie chickens for half price. I bought two. But I will likely not have those for dinner per se but will do something with the meat for a meal tomorrow night and freeze some of it.
I bought pre-seasoned beef on Sat. @ Sam's. I will cook that on the stove tonight. It's technically supposed to go in the oven, but it's way too hot - temps over 110 all week and possibly up to 118 again today. Yes, again, we hit that yesterday. Sigh.
I don't know what I am serving with dinner tonight, but the meat part is figured out, and that's all that matters to the boys. Ha!

It's Monday so it is red beans and rice with cornbread and ice tea. DH had an doctor's appointment this a.m. and then we went to Wally World for a new XL countertop oven.

I have not yet decided. I have leftover spaghetti sauce that is delicious, but I do not want spaghetti again. I might try to find a rice dish to use up the sauce.

I did not have to cook all weekend! Saturday, I spent 14 hours at our state Democratic Party Convention as a delegate for Hillary and didn't even eat except for some snacks I packed in a cooler in my car and yesterday being Father's Day, I took DH out to his favorite Mexican restaurant and then to the movie "Finding Dory". Our son had to work, so they are doing dinner and a movie Tuesday on his day off (another night I won't have to cook!) Today though, I have Stuffed Peppers cooking in the crockpot and will serve them with a salad and French bread.

Not a clue! We're defrosting the chest freezer today so the contents have been stuffed into the upright and refrigerator freezers making it difficult to access anything! Maybe hot dogs or hamburgers... if we can find them! Otherwise, maybe a grilled cheese sandwich and tomato soup. Yeah, that sounds doable.

This thread is a blessing when you can eat whatever you want, but a curse when you can't eat. Feel better quickly.
