I made a yellow salad and used golden beets for the first time. I cooked them with their skin on, then peeled them and sliced into a bowl. I put it in the fridge as it was supposed to last a few days. They started to oxidize and turn black. Is it still safe to eat it?

I just made the salad yesterday. I've always kept red beets in the fridge, so I didn't know if it's not safe to eat yellow ones once they oxidize?

Mine have more than "brown slightly". lol And it happened really quickly. I guess it's like an avocado, you can still eat it if parts are brown.
