Hello Vegan Peas! I'm so sorry I missed last week. I've been feeling a bit under the weather and I think my sinus infection is back-ugh! I had a small cold 2 weeks ago and now I'm having symptoms again of the sinus infection being back again. It's making me super tired so I called my doctor for another appointment and their computers were down. I've got to call them back to get back in to see my doctor. This is super frustrating! I finally got rid of that infection after having it for 7 long months only to get it back again. I hardly ever get colds so this is just, darn it! I know, I should count my blessings. It could be something so much worse. It just annoying and an energy suck.
How are you all doing? I decide this week to try the version of cashew milk that is unsweetened and that was a mistake. It tastes awful in my coffee and doesn't stay mix either. Next week I'm going back to the "original" version even if it does have a bit of sugar in it. My weight is still holding steady at 125 so I'm not worried about a bit of sugar in the cashew milk. It's a lot better for me and the cows to be happy with what I'm putting in my coffee, right?
I haven't been cooking dinner for a couple of weeks, we're just "doing our own thing" which means we each just handle it for ourselves. It's just me, DH, and our 26 year old DS living at home, since I've been feeling so lousy. Some nights I just snack on veggies and hummus, and have some oatmeal later if I'm still hungry. I was shopping for more veggies to snack with my hummus this week and was looking for organic cucumbers. Cucumbers are on the dirty dozen list-the 12 veggies and fruits you should always buy organic. Whole Foods only had a pack of small organic cucumbers left when I asked where they were and the nice girl who showed them to me said she likes to wash them first and then eats them with the peel on because the peel is where the nutrients are that are so great for your skin. She told me how she cuts them to eat with hummus-long into spears (like I said these were smaller ones). She also suggested bell peppers (another one that is on the dirty dozen list) in all of the colors. I usually just buy red and green, but this time I also got orange and yellow. So I'm going to chop all of these up and put them into an empty container that I usually buy the already chopped up carrots/celery in. That way I can just grab that from the fridge when I get hungry.
