The past several nights we've had either leftovers or pizza. We've been inundated w/teenagers, so pizza was a good choice. Tonight I need to cook a proper meal. It'll be a toss between chicken peas rice and scallions or chicken tortilla soup. Hmmm...

We're driving an hour and a half north of the city to meet up with BIL and SIL to buy a car from them for dd#1 ... it's SIL's old car (2009 Toyota Corolla) ... dd#1 will be getting her drivers licence in the next couple of weeks ... yay for me no longer driving her around We'll be having dinner at a restaurant with BIL and SIL so no cooking for me Dd#2 is staying home so I'll pick up Subway for her before we leave

I started cooking last nite for our fresh vegetable supper. We are having squash, peas, creamed corn, smothered okra, fried egg plant, sliced tomatoes and cornbread. So excited!

We're having funeral sandwiches, roasted potatoes, and, um.......I don't know about vegetables and fruits tonight. There's not much in my refrigerator, so options are severely limited. Oh! Pickles! I have pickles! Since cucumbers are usually thought of as a vegetable, but scientifically they are classified as a fruit, they can serve as both vegetable and fruit tonight! And I have some tomatoes too. Like the pickles, they will cover both fruit and vegetable.

The kids have shown a lot more interest in helping cook dinners so tonight the girls are cooking. Lean pork chops, oven roasted cabbage and green beans.

I have left over chicken so I'm making arroz con pollo with it. Maybe some refried beans and pico de gallo to go with it.

Salmon in pita (with salad, tomatoes, sour cream, cucumber, sweet corn), something everyone will eat without complaining. I bought strawberries for dessert (the first Norwegian ones this season!) and cream, but I think that will be for later.

We've got some garden fresh tomatoes, so I'm making Akathy's tomato soup along with some BLT's. I'm using the woven bacon technique again because DH has raved about it all week. Looking forward to it!

I'm working on clearing out my freezer so tonight is tofu/broccoli in a spicy sauce left over from a few weeks ago. Although I'm not clearing out the freezer, we're having a very similar dinner. Tofu in Thai sauce (thanks Trader Joes), rice and broccoli. Hopefully from prep to table it will take no more than about 10 minutes. Another late night because of swim, plus, in between classes I'm going to try to teach my incredibly stubborn youngest ds to ride his damned bicycle.

Grilled burgers, broccoli, fruit salad. I splurged on apricots at the market - my mom used to grow them in Arizona. The desert air was perfect, although AZ Rpeas would disagree with me right about now. Stay cool, ladies.

The slow cooker burrito meat turned out good. Needs just a bit more flavor, but still good. We will have leftovers tonight.

chicken pot pie and wedge fries here. I would be happy with fruit salad as I just picked some strawberries and have blueberries and raspberries but Ds has football practice so I guess I better feed him something substantial.

After searching the freezer for an available protei, I decided to have tilapia. It's pretty easy, which is great, because I'm not feeling the love for dinner this week. I'll fix fresh green beans and rice for sides.

I don't know. The kids' dad will be here, so I think I will assign him kitchen duty. He usually doesn't mind cooking. I just found out last night that I am having unexpected - but very welcomed - company next Friday. While I feel slightly overwhelmed, I know that I will get everything done. Just lots to do, like cleaning carpets. Lisa

I always read this thread....and usually posted when I was getting a take-away for some reason! Just want to say, I still see it and read it often (just don't post about the take-away as it doesn't seem the same) and am so pleased it's STILL AKathy's thread! hope that continues for a good long time.

I've had a hell of a sinus headache most of the day, so I've taken Iowa Chops out of the freezer for DH to BBQ when he gets home and we'll probably just have a baked potato with our chops.....but I do have some sour cream and fresh chives to jazz up the potatoes.
I have been a total SLUG today.

After a busy afternoon, we're having a quickie from the freezer - Swedish meatballs, gravy and I'll boil some noodles. We picked up some nice salad fixings from the grocery store and enough fruit for dessert too. That's it... dinner.
