What is your favorite cookie and/or dessert for these summer months?
Do you have a "go to" cookie or dessert that you bring to picnics or outings?
I've been thinking about cookies all afternoon LOL!
Right now I'm Lovin' some Lemon Biscotti

We love strawberry shortcake or berry trifle in the summer. For a chocolate fix, we like chocolate eclair cake. I make it using 1 box of coconut cream pie pudding and 1 box of cheesecake pudding. Delicious and it keeps well (doesn't melt like ice-cream desserts.)

I just mix them together. Turns out delicious. It's also good with French vanilla pudding.

Icecream sandwiches and strawberry shortcake (as discussed in the other semi heated thread with angel food cake and whip cream! ) Ice cream sandwiches are easy you can make them or buy them. The cookie ones are fun too.

Kool-aid pie! Cold and creamy and can be made low fat version. Love black cherry flavor myself but most of the rest of the family prefer lemonade flavor. Can be made with any flavor kool-aid.
Two packs kool-aid Can sweetened condensed milk Cool whip Graham cracker crust
Mix first three ingredients and pour in pie crust. Chill.

There's a few plums and nectarines on our hybrid tree! Ice cream sandwiches are easy you can make them or buy them. My favorite ice cream sandwich! Fat Boys!

For a dessert that takes five minutes prep time but a while to freeze, you can also buy Oreo or graham cracker crust, soften ice cream, scoop that into the pie crust, and then top with fruit or nuts and syrup.
Buster Bar dessert takes a bit longer, but it's oh. so. worth. it.

We really like this Strawberry Shortcut Cake. You can leave the alcohol out if you like, but it is quite tasty all fancied up!

I love those also. Trifle is a good summer dessert and so is Eton mess I like fruit based desserts for the summer

Lemonade Pie is my go-to summer dessert. I posted this recipe earlier this summer but here it is again:
Lemonade Pie
2 1/2 c graham cracker crumbs. 5 Tbs. brown sugar 8 Tbs. butter, melted 2 8 oz. packages cream cheese 12 oz. pink lemonade concentrate, thawed 16 oz. whipped topping
1. Using a fork, combine graham cracker crumbs, brown sugar and butter. 2. Press mixture into two 9 in. pie pans or one 9x13 pan. (I usually do the 9x13 pan) 3. In a large bowl, beat cream cheese until smooth. 4. Add 1/4 of the lemonade concentrate and beat until smooth. 5. Continue adding lemonade concentrate in this manner until all is combined with cream cheese. 6. Fold in whipped topping. 7. Pour over Graham Cracker crust and chill at least 2 hours.

Love lemon bars in the summer, and also key lime pie. But my favorite is rhubarb crisp.

We do a Chocolate Eclair dessert similar to the one pictured above. Except the layers are vanilla and then chocolate frosting is melted and poured over it. Very yummy and so easy.

Make sure and add the peanuts or it is too rich! www.food.com/recipe/buster-bar-dessert-72794Personally, I think that the fudge sauce in this recipe is to die for, and I would actually make it to use as an ice cream topping. I made a few of these over the Fourth of July using pink lemonade-flavored Kool Aid and it was a big hit. People thought it was kind of like key lime pie in flavor. Many requests for the recipe.
