Aside from possible free Slurpees if the line isn't out-the-door long, I'm thinking about making chicken, peas, scallions and rice. We'll see how the day goes. Honestly, I've never been so glad to have finished a weekend.
What's on your menu?
Have a wonderful Monday and a fabulous week everyone.

Cool here today, with 40 mph wind! Ugh. But a perfect day for chili, cornbread, tossed salad.

I had to turn the AC back on today which means the oven will not get used. I'm a stickler to the rules. Especially ones I make. Anyway, we're having Tuscan tuna salad in cracked wheat buns, coleslaw vinaigrette, cut-up raw veggies, and grapes and blueberries (and cantaloupe if I cut it up).

According to the cook it's steak sandwiches for us. I'm not going to complain.

I'm feeling better, so I'm back on kitchen duty. So today it was fried mackerell, potatoes, sour cream, cucumber salad and avocado mousse. (The receipe calls it "mousse", but it's more like goucamole). Strawberries and ice cream for dessert.

I pulled out a pack of frozen sloppy joes last night so we could have that today. We also turned on the AC (but last night) and it's humid again. Not sure what else I want with this besides chips. I guess I will have to hit the grocery...ick.

Have some chicken schnitzel, marinara, and some mozzarella thawing for tonight's dinner of chicken parmesan w/angel hair pasta and Caesar salad. Cantaloupe for dessert.

My take on Panera's BBQ chicken salad. If the rest of the family is lucky I will buy dinner rolls to go with.

We are going to have sloppy joes on wheat buns, cantaloupe, and maybe pasta salad if I'm feeling ambitious enough to make it.

Back home means back to the kitchen! I'm making an asparagus and shallot quiche. I may have green peas for a side. I bought some gelato for dessert.

I have an appointment today in Anchorage, so you know what that means.....I will hit Costco on my way home and get one of Lucy's famous rotisserie chickens!!!
I might turn it into Chicken Curry Salad served with a big flat slice of tomato and red onion on a croissant! Or, if I am too tired when I get back we will just eat the chicken and a bagged salad.

Cool here today, with 40 mph wind! Ugh. But a perfect day for chili, cornbread, tossed salad. I came in to post that I was going to make teriyaki chicken, rice and salad. Even though we don't have any chicken and dh would have to run to the store for me. But seeing this, I do have some hamburger/ground turkey in the fridge so I think I'm going to make chili for lunch since I'm working from home and it's overcast Thank you!

We are in the midst of hotter than the surface of the sun weather. I swear, it is miserably hot even to me. Last I checked it was 95, with a feels like temp of 108. You guys who are turning on the a/c?? I envy you. As for dinner, probably something simple like a baked potato with some kind topping.

I'm positive it will involve chicken since that's what I took out of the freezer. The rest of the meal is one big ?

In three weeks we will be dry camping (no hook ups) in a high school parking lot in 90+ degree weather for 5 days. I like to call it camping on the sun so I get you But it's for our music festival so we do it every year and have a great time too!

I was going to have leftovers from yesterdays supper which was chicken and dressing, squash, buttered beets, and macaroni salad but, DS and his girlfriend must have gotten hungry sometime yesterday evening while I was away and pretty much cleaned that out. So tonight might be yoyo.

I'm putting together an actual meal. I picked up a rotisserie chicken this afternoon and now I have seasoned potato wedges in the oven. I also have fresh broccoli ready to go. I also have a pound cake. DH is taking a nap after a long day at work and will be mighty surprised when he gets up.

Just eating leftover baked spaghetti here. I wanted to make broccoli-cheddar soup (yeah, I've been talking about it for weeks) but I need to get more cheddar cheese. Maybe tomorrow. I have an appointment today in Anchorage, so you know what that means.....I will hit Costco on my way home and get one of Lucy's famous rotisserie chickens!!!
